Chocolate Peppermint Cookies

The beloved christmas flavored rolled into one delicious christmas cookie that everyone will enjoy.

Ingredients
  

  • 1 cup butter (two sticks, browned)
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 tbsp vanilla extract
  • 1 tsp vanilla bean paste
  • 1/2 tsp peppermint extract
  • 2 eggs
  • 1/2 cup cocoa powder
  • 2 1/2 cups flour
  • 2 tbsp cornstarch
  • 1 tbsp baking soda
  • 1/2 tsp salt
  • 1/2 cup crushed peppermint candy
  • 1 1/2 cups chocolate chips
  • flaky sea salt (optional)

Instructions
 

  • Pre heat oven to 350 degrees and line your baking sheets with parchment paper.
  • In a large bowl add your brown butter, sugar, and brown sugar and mix until combined. Add your eggs, extracts and vanilla bean paste and mix again. Dough should be fluffy in texture at this point.
  • In a medium sized bowl add all of your dry ingredients and mix until combined. Add your dry ingredients into your wet and fold until combined. If dough is too sticky, add a couple tablespoons of flour until desired consistency. Be careful not to add too much as this could make your cookies tough.
  • Next, add your peppermint candy pieces and chocolate chips and fold until well incorporated.
  • Scoop or roll out 1-2 inch balls and place on a cookies sheet a few inches apart. Top with more candy and chocolate chips. Bake at 350 degrees for 8-10 minutes. Sprinkle with flaky sea salt and let set for a couple of minutes.
  • Serve, share and enjoy!!

Notes

Brown butter is optional but 100% worth it. If you decide to skip this step, be sure to melt your butter if you want a similar consistency.
Vanilla bean paste and flaky sea salt are optional for these cookies.
These cookies can be adjusted to be gluten and dairy free! I have not tried it, but its possible!!
