Chocolate Peppermint Cookies

We all know that cookies are the ultimate Christmas dessert. The possibility for christmas cookies are ABSOLUTELY endless. We also know that chocolate peppermint is one of the most beloved christmas flavor combinations. SOOOO here I present to you, chocolate peppermint cookies. AND they are amazing!! Don’t believe me? I guess you better make them for yourself! Santa Claus will thank you. 😉

When I was younger every year we would make cookies around Christmas time, mainly sugar cookies. We would always make sure to leave some treats out for Santa, whether that was cookies we made just for him or some fun treats we put together like buckeyes and chocolate pretzels and we also left him a glass of milk. OH and we also would leave out some carrots or celery for the reindeer. Sometimes traditions like that seem silly but they make for great memories. Christmas time is the best because of all the family traditions we share and getting to celebrate the true reason for the season, Jesus’ birth. What are some of your favorite traditions to celebrate Christmas?

What you’ll need:

  • butter
  • sugar
  • brown sugar
  • eggs
  • vanilla extract
  • peppermint extract
  • vanilla bean paste (optional)
  • flour
  • cocoa powder
  • cornstarch
  • salt
  • baking soda
  • peppermint candy
  • chocolate chips
  • flaky sea salt (optional)

These cookies are super easy to make and everyone will love them! They are basically like a double chocolate chip cookie with peppermint candies and flavor. If you’re a fan of chocolate chip cookies and peppermint, you will loveee these. The middle is gooey and the edges have the perfect crisp! They are also made with brown butter which adds the perfect depth of flavor.

Ingredients Method Notes

Ingredients
  

  • 1 cup butter (two sticks, browned)
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 tbsp vanilla extract
  • 1 tsp vanilla bean paste
  • 1/2 tsp peppermint extract
  • 2 eggs
  • 1/2 cup cocoa powder
  • 2 1/2 cups flour
  • 2 tbsp cornstarch
  • 1 tbsp baking soda
  • 1/2 tsp salt
  • 1/2 cup crushed peppermint candy
  • 1 1/2 cups chocolate chips
  • flaky sea salt (optional)

Method
 

  1. Pre heat oven to 350 degrees and line your baking sheets with parchment paper.
  2. In a large bowl add your brown butter, sugar, and brown sugar and mix until combined. Add your eggs, extracts and vanilla bean paste and mix again. Dough should be fluffy in texture at this point.
  3. In a medium sized bowl add all of your dry ingredients and mix until combined. Add your dry ingredients into your wet and fold until combined. If dough is too sticky, add a couple tablespoons of flour until desired consistency. Be careful not to add too much as this could make your cookies tough.
  4. Next, add your peppermint candy pieces and chocolate chips and fold until well incorporated.
  5. Scoop or roll out 1-2 inch balls and place on a cookies sheet a few inches apart. Top with more candy and chocolate chips. Bake at 350 degrees for 8-10 minutes. Sprinkle with flaky sea salt and let set for a couple of minutes.
  6. Serve, share and enjoy!!

Notes

Brown butter is optional but 100% worth it. If you decide to skip this step, be sure to melt your butter if you want a similar consistency.
Vanilla bean paste and flaky sea salt are optional for these cookies.
These cookies can be adjusted to be gluten and dairy free! I have not tried it, but its possible!!

    You NEED to try these cookies!! They were such a hit and everyone LOVED them! They are so soft and have the perfect peppermint to chocolate ratio, so so so good omg.

    I made these for Christmas this year and they were delicious! They had a great texture–crispy on the outside and soft and chewy on the inside. The peppermint and chocolate flavor was excellent! I will definitely make these again.
