Funfetti Sprinkle Sugar Cookies

The true meaning of Christmas all starts with Jesus. He is the whole reason for the season. Today we celebrate by making HAPPY BIRTHDAY JESUS COOKIES. They are funfetti cookies or you could also call them Birthday Cake cookies OR Sprinkle Sugar Cookies.

Jesus came to earth as baby boy, lived a perfect life and fulfilled his mission to save us from our sins by dying on the cross and defeating death 3 days later. Christmas is such a special reminder to be thankful that we have a savior who sacrificed His life for us so that we can be saved from our sin and live a life honoring to him.

The past couple of years I’ve done a video series on my TikTok and Instagram called the 12 days of Christmas cookies series where I create 12 different Christmas cookie recipes to share with you during the holidays.

I love getting to think up and make fun new recipes for you to make for your friends and family and of course for Santa Claus too!! You can make these for a Christmas cookie swap, office Christmas party, holiday get together, birthday party, Christmas movie night, Happy Birthday to Jesus or just to celebrate the Christmas season!! The possibilities are endless.

These funfetti cookies are soft and chewy and the perfect sweet sugar cookie with rainbow sprinkles. They are so fun and so delicious. PLUS they are superrrr easy to make. They can be made in one bowl and require no chilling.

I like sharing videos so you can see part of the process, PLUS who doesn’t love watching cute Christmas baking videos? HAHA I know I love it. This is my third year doing this series so if you are ever in need of Christmas Cookie recipe ideas, you’ve come to the right place.

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.

What You’ll Need:

  • butter
  • sugar
  • brown sugar
  • eggs
  • vanilla extract
  • cornstarch
  • baking soda
  • salt
  • flour (all purpose)
  • rainbow sprinkles
  • parchment paper

All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

You can make this cookie dough ahead of time and freeze the cookie dough for up to a month. Be sure to roll or scoop out the dough before baking for easier baking. You can also store it in the fridge for 1 week.

I am so excited for you guys to try these out and I hope they make your celebration so fun and special. I love doing this cookie series for the holidays and seeing you guys make them and enjoy them. It’s the best!!

To get my cookies to be super round and all the same shape, I like using a round glass, a biscuit cutter or cookie cutter to the lid of a mason jar!! It’s definitely not required but just a fun little tip, I like to use. I’ll share a link HERE to some on amazon if you’d like to try out this simple yet effective baking hack.

Soft and chewy sugar cookies filled with fun rainbow sprinkles. These are perfect for any birthday or event because who doesn't love a good sugar cookie that taste like birthday cake.

Ingredients Method

Ingredients
  

  • 1 cup butter 2 sticks, softened, unsalted
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 tbsp vanilla extract
  • 1 egg + 1 egg yolk
  • 2 1/2 cups flour all purpose
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup rainbow sprinkles

Method
 

  1. Preheat oven to 350°F and line your baking sheets with parchment paper.
  2. In a large mixing bowl cream your butter, sugar and brown sugar until light and fluffy.
  3. Add your vanilla extract, egg, and egg yolk in stir until well combined.
  4. Add your flour, cornstarch, baking soda, and salt. Stir until just combined.
  5. Pour in about 3/4ths of your rainbow sprinkles (reserving the rest for the tops of your cookies) and stir in until evenly distributed.
  6. Using a cookie scoop, scoop your cookie dough into 1-2 inch balls and place on your baking sheet lined with parchment paper.
  7. Dip or top each cookie with more rainbow sprinkles.
  8. Bake in the oven at 350 F for 8-10 minutes until edges start to brown.
  9. Remove from oven, use a round glass or cookie cutter to scoot around the edges of the cookies to make them round and thicker. Let cool.
  10. Serve, share & Enjoy!!
