Christmas is one of my favorite times of year. I love how it challenges people to focus more on their family, giving and taking time to slow down. It’s so cozy and bright and festive and truly brings so much joy.
The Holidays can bring a lot of stress as well so whatever this season looks like for you, it’s important to remember the TRUE reason for the season, Jesus. God sent Jesus down as a baby, becoming fully human while also being fully God, to save this world from sin and be able to be right with God. Salvation in Him is a FREE gift. Nothing we can do will ever be able to earn it. AND No one is ever too far gone to receive it. Anyone who calls on the name of the Lord, will be saved. (Romans 10:9)

What Should I Make These For?
This is the PERFECT cookie recipe for the holiday season. The flavors are festive and are sure to please a crowd. You could make these cookies for Christmas, or anytime throughout the season. They would be a wonderful recipe for a holiday family get together or to make for Santa on Christmas Eve.
Making them with your kids, best friend or lover would be such a fun festive holiday activity!! OR you could even make them for your neighbors, a cookie exchange, essential workers in your community, your church family or school teachers. Cookies always make such a kind and thoughtful gift. They’re also personal and affordable. The holidays are the best time to give homemade gift and spread the spirit of Christmas.

To get my cookies to be super round and all the same shape, I like using a round glass, a biscuit cutter or cookie cutter to the lid of a mason jar!! It’s definitely not required but just a fun little tip, I like to use. I’ll share a link HERE to some on amazon if you’d like to try out this simple yet effective baking hack. (affiliate code)

Peppermint Bark Chocolate Chip Cookies
Ingredients
Method
- Pre-heat your oven to 350° F and line your baking sheets with parchment paper.
- In a large bowl, add your softened butter, sugar and brown sugar and mix until combined.
- Next add your eggs and vanilla and stir again until well combined.
- Add your dry ingredients and fold until incorporated. Dough should be soft in texture.
- Next, add your chocolate chips. Fold until combined.
- If you are using homemade peppermint bark, here’s how to make it: In a double boiler or in a microwave safe bowl, add your dark chocolate and melt. If using microwave, melt in 30 second increments until melted, stirring in between. If using double broiler on the stove, continue stirring in a bowl over simmer water until melted.
- Do the same with the white chocolate.
- In a parchment paper lined baking dish add your melted dark chocolate and let chill for 15 minutes. Remove from freezer and add your white chocolate and spread evenly over top of your dark chocolate. Sprinkle with crushed peppermint candy pieces. Let chill for another 15 minutes.
- Scoop your cookie dough into 1-2 inch balls onto your baking sheets lined with parchment paper a couple inches apart to prevent from spreading into each other.
- Top with extra chocolate chips and peppermint bark and place in the oven for 8-10 minutes at 350° F.
- Remove from oven and top with more peppermint bark and some flaky sea salt. Use a round cookie cutter or glass to make your cookies round.
- Share and ENJOY!!
