Piña Colada Popsicles

WELCOME TO MY SUMMER RECIPE SERIES– I thought it would be so fun to do a summer recipe series where I am making different fun recipes (some healthy some sweet) that are perfect to make during the summer months. They will be quick and easy recipes anyone can make.

Some of these recipes will be no bake or frozen and perfect for those days where you don’t want to turn your oven but still need a sweet treat!! AND THEN some will be baked because sometimes you just need a warm chocolate chip cookie no matter the temperature outside.

Although I’m going to do a variety of baked and no bake desserts, I am definitely planning on doing LOTS of homemade popsicle recipes.

Pineapple Coconut Popsicles

Popsicles are such a fun and east summer treat and they are so nice on hot days. Who doesn’t love a treat that also cools you down during hot summer months? I know I do, especially living in Florida where it is hot 10 months of the year.

They are fruity, sweet, flavorful AND healthy because it’s mainly just fruit and juice!! I like adding honey as a better sweetener than sugar but you could probable even leave that out and they would still be sweet enough.

I remember growing up in Ohio, during HOT summer months, I would always go into my kitchen as a kid or tween and make a big mess whipping up anything I could. Or while we were grocery shopping, I would ask my mom if I could get the ingredients to make a special treat I had in mind. HAHA

Let’s just say our freezer was definitely filled with lots of colorful sticky plastic. It’s funny looking back to certain traits I had as a kid and now they have spilled into the things I do even now. Little Cass would have never guessed “food blogger” but here we are and we are not mad about it

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.

What You’ll Need:

  • frozen pineapple
  • pineapple juice
  • coconut milk
  • shredded coconut
  • popsicle mold
  • popsicle sticks

All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.
