Veggie Breakfast Tacos are so delicious and easy to make. It makes for the perfect breakfast. Healthy, simple, customizable and delicious.

Ingredients
  

  • 6-8 mini tortillas
  • 4-6 eggs
  • ¼ cup heavy cream
  • salt & pepper
  • 1 head lettuce chopped
  • 1 cucumber chopped
  • cilantro chopped
  • 1 cup shredded cheese
  • sour cream

Instructions
 

  • In a medium sized bowl whisk your eggs and heavy cream until fluffy and season with salt and pepper to your liking.
  • In a saucepan over medium heat cook your eggs. I made mine scrambled.
  • Heat your tortillas in the pan with some olive oil.
  • Once you tortillas and eggs are done, you’re ready to assemble.
  • Add your eggs, chopped lettuce and cucumbers, cilantro, and cheese to your tortillas.
  • Top with a dollop of sour cream.
  • Customize to your liking, share and enjoy!
