Veggie Breakfast Tacos

Veggie Breakfast Tacos are so delicious and easy to make. It makes for the perfect breakfast. Healthy, simple, customizable and delicious.

Ingredients
  

  • 6-8 mini tortillas
  • 4-6 eggs
  • ¼ cup heavy cream
  • salt & pepper
  • 1 head lettuce chopped
  • 1 cucumber chopped
  • cilantro chopped
  • 1 cup shredded cheese
  • sour cream

Method
 

  1. In a medium sized bowl whisk your eggs and heavy cream until fluffy and season with salt and pepper to your liking.
  2. In a saucepan over medium heat cook your eggs. I made mine scrambled.
  3. Heat your tortillas in the pan with some olive oil.
  4. Once you tortillas and eggs are done, you’re ready to assemble.
  5. Add your eggs, chopped lettuce and cucumbers, cilantro, and cheese to your tortillas.
  6. Top with a dollop of sour cream.
  7. Customize to your liking, share and enjoy!
