Valentine's Day Monster Cookies

Soft and chewy Monster Cookies filled with peanut butter, oats, chocolate chips and M&ms. They have all the best cookie add-ins rolled in one delicious cookie recipe. The perfect peanut butter oatmeal chocolate chip cookie recipe. Soft, chewy, easy & quick to make.

Ingredients
  

  • 1/2 cup butter softened, unsalted
  • 3/4 cup peanut butter
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tsp vanilla bean paste optional (replace with more extract)
  • 3/4 cup oats
  • 2 1/4 cup flour all purpose, spooned and leveled
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp milk
  • 1 cup chocolate chips
  • 1 cup Valentine's M&Ms
  • flaky sea salt optional

Instructions
 

  • Preheat your oven to 350° F and line your baking sheets with parchment paper.
  • In a large bowl, add your softened butter, peanut butter, brown sugar and sugar. Stir until well combined.
  • Add your egg, egg yolk, vanilla extract and vanilla bean paste. (If you don't have vanilla bean paste, add a dash more of vanilla extract.) Stir together until light and fluffy in texture.
  • Then, add all of your dry ingredients, including your flour, baking soda, oats and salt. Stir until just combined. If your dough seems too dry, add 2 tbsp of milk.
  • Add your chocolate chips, and m&ms reserving some for the tops of the cookies. Stir until just combined.
  • Scoop out your cookie dough into 1-2 inch balls and place on your baking sheets lined with parchment paper a few inches apart. (to prevent them from spreading into each other) Top with additional chocolate chips and M&ms.
  • Bake at 350℉ for 8-10 minutes. Remove from oven and using a round cookie cutter, scoot around the cookies to make them round and all the same size. Top with flaky sea salt. (optional)
