Ultimate Peanut Butter Reese's Cup Stuffed Cookies

These Ultimate Peanut Butter Reese's Cup Stuffed Cookies are soft, chewy & thick. They are perfect for a late night sweet treat or to fulfill your peanut butter craving. They are a super easy peanut butter cookie recipe but elevated to maximum indulgence. Each cookie is stuffed with a Reese's cup and filled with all the peanut butter and chocolate flavors your heart could imagine. Enjoy!!

Ingredients
  

  • 1/2 cup butter unsalted 1 stick
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 2 1/2 cup flour all purpose
  • 1 cup chocolate chips
  • 1/2 cup chopped peanuts
  • 1/2 cup peanut butter chips
  • 1/2 cup Reese's Pieces
  • 1/2 cup chopped Reese's cups
  • Reese's cups
  • flaky sea salt optional

Method
 

  1. Pre-heat your oven to 350℉ and line your baking sheets with parchment paper.
  2. In a large bowl add your peanut butter and softened butter and cream together.
  3. Add your brown sugar, sugar and cream together until light and fluffy.
  4. Add your eggs and vanilla and mix again.
  5. Once, everything is well combined, add your dry ingredients. Flour, baking soda, cornstarch and salt. Stir until just combined.
  6. Add your chocolate chips, Reese's pieces, chopped Reese's cups and chopped peanuts and stir until well combined.
  7. Scoop your cookie dough with a 1-2 inch cookie scoop, spread out you dough and add a full Reese's cup and fold over your dough. Top your cookies with more chocolate chips and Reese's Pieces and place on your baking sheets lined with parchment paper, a few inches apart.
  8. Bake in your oven at 350 for 8-10 minutes until they start to set and brown.
  9. Remove from oven and using a round cookie cutter, scoot the edges of your cookies to make them perfectly round. (optional) Sprinkle each cookie with some flaky sea salt.
