  • 2 tsp vanilla extract
  • 3 cups flour all purpose, spooned and leveled
For Apple Pie Filling:
  • 4-5 apples peeled, sliced and diced
  • 1/2 cup brown sugar
  • 1 tbsp cinnamon
  • pinch of Lemon Diamond Crystal Flavored Salt
  • 2 tbsp butter softened
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
For Salted Caramel:
  • 1/4 cup butter 1/2 stick
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • pinch of Diamond Crystal Kosher Salt
  • 1/4 cup heavy whipping cream

Equipment

  • baking pans
  • bowl
  • parchment paper
  • spatula
  • sauce pan
  • cutting board and knife

Method

For Shortbread:
  1. Line your baking sheets with parchment paper and pre-heat your oven to 350°F.
  2. In a large bowl add your softened butter, sugar and vanilla and mix until combined.
  3. Add your Diamond Crystal Kosher salt and flour. Stir until it comes together and the dough forms. If dough is too dry, try combining it together with your hands, and add a tsp of water until it comes together.
For Apple Pie Filling:
  1. Add your diced apples, brown sugar, cinnamon, Diamond Crystal Lemon Flavored salt and softened butter. Mix until it’s well combined. Place on the stove top over medium heat for mixture to melt and soften. Stir continuously.
  2. After a few minutes, apples should start to soften and mixture should start to bubble. Add your corn starch, vanilla extract, and stir together again. This should help thicken it.
  3. Once your apple mixture is soft and gooey, remove it from the heat to let cool.
  4. Scoop out a small piece of your shortbread cookie dough and place on your baking sheet lined with parchment paper, slightly flattening it. Use a fork to press down the edges around your cookie to give it the classic pie imprint.
  5. Continue with the rest of your cookie dough until they are all shaped as little pie crusts. Using a spoon, add a little diet into the middle of each cookie.
  6. Bake at 350°F for 8-10 minutes. Remove from oven and let cool.
  7. Add a spoonful of your apple pie cookie filling into the middle of each of your cookies.
For Salted Caramel:
  1. In a sauce pan over medium high heat, add your butter and brown sugar and stir until combined. Keep stirring until mixture starts to bubble. Be careful to not walk away as this could burn easily.
  2. Add your Diamond Crystal Kosher Salt and vanilla extract and keep cooking over the stove and stirring continuously. Once it starts to bubble and foam up, continue cooking for a minute or two.
  3. Remove from heat and add your heavy whipping cream. Stir until it comes together and is smooth. Let cool.
  4. Drizzle each of your apple pie cookies with the salted caramel!!
  5. Share and ENJOY!!
