Pre-heat your oven to 350° F and line your baking sheets with parchment paper.
In a large bowl add your softened butter, peanut butter, brown sugar, and sugar and whisk until light and fluffy and well combined.
Add your eggs and vanilla extract and whisk until well combined and nearly foamy.
In a medium sized bowl add your oats, flour, cornstarch, baking soda and salt and stir until combined.
Pour dry ingredients into your wet and fold until well incorporated. Add your chocolate chips and stir again.
Scoop your dough into 1-2 inch balls and place on your baking sheets lined with parchment paper a few inches apart. Top with more chocolate chips.
Bake at 350° for 8-10 minutes until golden brown. Remove from oven and top with flaky sea salt.
