Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients
  

  • 1/2 cup butter softened
  • 3/4 cup peanut butter
  • 1 cup brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 1/4 cup flour
  • 1 cup oats
  • 1 tbsp cornstarch
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups chocolate chips
  • flaky sea salt

Instructions
 

  • Pre-heat your oven to 350° F and line your baking sheets with parchment paper.
  • In a large bowl add your softened butter, peanut butter, brown sugar, and sugar and whisk until light and fluffy and well combined.
  • Add your eggs and vanilla extract and whisk until well combined and nearly foamy.
  • In a medium sized bowl add your oats, flour, cornstarch, baking soda and salt and stir until combined.
  • Pour dry ingredients into your wet and fold until well incorporated. Add your chocolate chips and stir again.
  • Scoop your dough into 1-2 inch balls and place on your baking sheets lined with parchment paper a few inches apart. Top with more chocolate chips.
  • Bake at 350° for 8-10 minutes until golden brown. Remove from oven and top with flaky sea salt.
  • Let cool, serve, share and enjoy!!
