Peanut Butter Blossoms

A soft and chewy peanut butter cookie topped with a chocolate kiss. Perfect for the holidays, to fulfill your peanut butter fix, or a late night treat for your sweet tooth.

Ingredients
  

  • 1/2 cup butter softened
  • 3/4 cup peanut butter
  • 1 cup brown sugar
  • 1/3+1/3 cup sugar separated
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 1/2 cups flour
  • 2 tbsp cornstarch
  • 1 tbsp baking soda
  • 1/2 tsp salt
  • Hershey Kisses

Method
 

  1. Pre-heat oven to 350° and line your baking sheets with parchment paper.
  2. In a large bowl add your butter and peanut butter and mix until combined. Add your brown sugar and 1/3 cup of your white sugar and mix again until everything comes together.
  3. Add your eggs and vanilla to your butter and sugar mixture and stir until it gets super fluffy.
  4. Once all of you wet ingredients are combined, add your flour, baking soda, cornstarch, and salt and fold until combined.
  5. Scoop out your cookie dough into 1-2 inch balls and roll into the remaining 1/3 cup of sugar. Place onto your baking sheet a few inches apart and bake at 350° for 8-10 minutes.
  6. Remove from oven, top with a chocolate kiss (I used Hersheys) and place back in the oven for 1 more minute. Remove from oven and let cool for a couple of minutes.
  7. Serve, share and enjoy!!
