A soft and chewypeanut butter cookies topped with a chocolate kiss. Perfect for the holidays, your peanut butter fix, or a late night fulfilling of your sweet tooth.
Pre-heat oven to 350° and line your baking sheets with parchment paper.
In a large bowl add your butter and peanut butter and mix until combined. Add your brown sugar and 1/3 cup of your white sugar and mix again until everything comes together.
Add your eggs and vanilla to your butter and sugar mixture and stir until it gets super fluffy.
Once all of you wet ingredients are combined, add your flour, baking soda, cornstarch, and salt and fold until combined.
Scoop out your cookie dough into 1-2 inch balls and roll into the remaining 1/3 cup of sugar. Place onto your baking sheet a few inches apart and bake at 350° for 8-10 minutes.
Remove from oven, top with a chocolate kiss (I used Hersheys) and place back in the oven for 1 more minute. Remove from oven and let cool for a couple of minutes.
