In a large bowl, cream together your softened butter, brown sugar and sugar until well combined.
Add in your eggs and vanilla extract and mix until well combined.
Add in your flour, baking soda, cornstarch, salt, oats and stir until well incorporated. Mix in your butterscotch chips.
Scoop out your dough into 1-2 inch balls and place on baking sheet lined with parchment paper a few inches apart.
Bake at 350℉ for 8-10 minutes until golden brown. Remove from oven and top with extra butterscotch chips and flaky sea salt.
