No-Bake Mango Cheesecake Bars

Creamy no-bake mango cheesecake bars are so easy and simple to make and is a great way to incorporate mangoes into a favorite dessert.

Servings: 16 Cheesecake bars

Ingredients
  

For Graham Cracker Crust:
  • 1 sleeve crushed graham crackers (about 9 full size graham crackers)
  • 6 tbsp butter melted
  • 1/2 cup brown sugar (light)
For Cream Cheese mixture:
  • 16 oz cream cheese (2 blocks)
  • 1/2 cup brown sugar (light)
  • 1 tsp vanilla extract
  • 1 tub whipped topping (I used Truwhip)
  • 1 cup chopped mangoes

Method
 

  1. For the crust, add stir together your graham cracker crumbs, melted butter and brown sugar until well combined and comes together slightly when you press it.
  2. Pour it into a 9 by 13 inch baking pan lined with parchment paper and press it down.
  3. Let it chill in the fridge.
  4. In a large bowl add your cream cheese, light brown sugar, vanilla extract, and whip it up until its well combined.
  5. Fold in you whipped topping (I used Truwhip)
  6. Chop up your mangoes and fold into mixture. (I used Harry & David mangoes)
  7. Pour your mixture into the prepared crust and spread it out evenly.
  8. Chill in the freezer for 30 minutes until firm enough to cut.
  9. Cut into bars, share and enjoy!!

Notes

STORING: you can store these in the fridge, covered for a couple days or in the freezer for about a week. They are best enjoyed when they are cold but not solid.
