No-Bake Mango Cheesecake Bars

Creamy no-bake mango cheesecake bars are so easy and simple to make and is a great way to incorporate mangoes into a favorite dessert.

Ingredients
  

For Graham Cracker Crust:

  • 1 sleeve crushed graham crackers (about 9 full size graham crackers)
  • 6 tbsp butter melted
  • 1/2 cup brown sugar (light)

For Cream Cheese mixture:

  • 16 oz cream cheese (2 blocks)
  • 1/2 cup brown sugar (light)
  • 1 tsp vanilla extract
  • 1 tub whipped topping (I used Truwhip)
  • 1 cup chopped mangoes

Instructions
 

  • For the crust, add stir together your graham cracker crumbs, melted butter and brown sugar until well combined and comes together slightly when you press it.
  • Pour it into a 9 by 13 inch baking pan lined with parchment paper and press it down.
  • Let it chill in the fridge.
  • In a large bowl add your cream cheese, light brown sugar, vanilla extract, and whip it up until its well combined.
  • Fold in you whipped topping (I used Truwhip)
  • Chop up your mangoes and fold into mixture. (I used Harry & David mangoes)
  • Pour your mixture into the prepared crust and spread it out evenly.
  • Chill in the freezer for 30 minutes until firm enough to cut.
  • Cut into bars, share and enjoy!!

Notes

STORING: you can store these in the fridge, covered for a couple days or in the freezer for about a week. They are best enjoyed when they are cold but not solid.
