In a large bowl add your butter and sugars and beat until combined. Next, add your eggs and vanilla and beat again.
Once your wet ingredients are combined, add your dry ingredients and mix until dough forms. Add your orange food coloring and food until evenly distributed.
Let your cookie dough chill for about 30 minutes to an hour to firm up so you can roll it out.
Roll your cookie dough out and cut out cute pumpkin shapes and Jack o lantern faces. Make sure you cut faces out faces on half of the cookies. Let chill in the freezer for 15 minutes then bake in the oven for around 10-12 minutes. Let them cool.
For Ganache:
Measure your heavy cream in a glass measuring cup and heat in the microwave was about 30-60 seconds.
In a small bowl add your chocolate chips and slowly pour your hot heavy cream on top.
Let set for a couple of minutes and stir until combined. This will be your filling.
Assemble:
Once your cookies and ganache have cooled down you are ready to assemble. On your cookie with the face spread a spoonful of chocolate ganache. Sandwich your other cookie on top. Do this with the rest of your cookies. Enjoy!
