Ingredients

For Cookies:

  • 1 cup of butter
  • 1 cup sugar
  • 1/3 brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Orange food coloring

For Chocolate Filling:

  • 1/2 cup heavy cream
  • 1 cup chocolate chips

Instructions

For Cookies:

  • In a large bowl add your butter and sugars and beat until combined. Next, add your eggs and vanilla and beat again.
  • Once your wet ingredients are combined, add your dry ingredients and mix until dough forms. Add your orange food coloring and food until evenly distributed.
  •  Let your cookie dough chill for about 30 minutes to an hour to firm up so you can roll it out.
  • Roll your cookie dough out and cut out cute pumpkin shapes and Jack o lantern faces. Make sure you cut faces out faces on half of the cookies. Let chill in the freezer for 15 minutes then bake in the oven for around 10-12 minutes. Let them cool.

For Ganache:

  • Measure your heavy cream in a glass measuring cup and heat in the microwave was about 30-60 seconds.
  • In a small bowl add your chocolate chips and slowly pour your hot heavy cream on top.
  • Let set for a couple of minutes and stir until combined. This will be your filling.

Assemble:

  • Once your cookies and ganache have cooled down you are ready to assemble. On your cookie with the face spread a spoonful of chocolate ganache. Sandwich your other cookie on top. Do this with the rest of your cookies. Enjoy!
