Line your baking sheets with parchment paper and pre-heat your oven to 350°F.
In a large bowl sugar and orange zest and using a fork or your fingers, mix them together until the sugar is moistend by the orange zest.
Add your softened butter and vanilla and mix until combined.
Add your salt and flour. Stir until it comes together and the dough forms.
Roll your cookie dough into a log about 2 inch thick. Wrap in some Parchment Paper or Plastic wrap and chill for 20 minutes.
Once it's done chilling, unwrap your dough and cut into 1/2 inch slices. This should make about 25-32 cookies. If you want crispier cookies, cut them a little thinner.
Place on your baking sheet and bake at 350°F for 10 minutes or until edge start to get some color. Remove from oven and let cool.
Pour your dark chocolate chips into a microwave safe bowl and microwave for 30 second increments, stirring in between, until it's melted and smooth.
Once your orange shortbread cookies have cooled, dip one side of them fully into the melted dark chocolate.
Place on a piece of parchment paper to set. Continue with the rest of your shortbread.
Sprinkle with some extra orange zest and some flaky sea salt.
