If you're a fan of Biscoff cookie butter than you'll love these cookie butter cookies. They are soft, chewy and have a hint of cinnamon. PLUS they come together in no time. Perfect for that late night craving or to help fulfill your sweettooth.
Pre-heat your oven to 350° and line your baking sheets with parchment paper.
In a sauce pan over medium high heat, add your butter and let melt. Once it's melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
In a large bowl add your brown butter, cookie butter, brown sugar and sugar and mix until well combined. Add your two eggs and vanilla extract and mix again til it comes together and is light and fluffy in texture.
Add your flour, cornstarch, baking soda, salt and cinnamon and fold until all the dry ingredients are incorporated.
Scoop out your cookies and place on your baking sheets lined with parchment paper a couple inches apart. Bake for 8-10 minutes in a 350° oven.
Remove from oven and let set. Cool for a couple minutes, share and ENJOY!!
