Coconut Cream Pie Homemade Popsicles

Coconut Cream Pie Homemade Popsicles are smooth, creamy and refreshing. With a creamy base, using Eagle Milk Brand Sweetened Condensed Milk and a crispy outside full of flavor from the toasted coconut, this recipe is the perfect summer treat.

Ingredients
  

For Coconut Base:
  • 1 can of Eagle Brand Sweetened Condensed Milk
  • 1 can of coconut milk
  • 1 cup toasted coconut flakes
  • 1 cup of heavy whipping cream
For Whipped Cream layer:
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla optional
  • + 1 cup toasted coconut flakes for topping

Method
 

  1. In a large bowl, add your Eagle Milk Brand Sweetened Condensed Milk and your can of coconut milk and stir until combined.
  2. In another bowl or cup, use a mixer or milk frother to whip up one cup of your heavy cream, until it becomes fluffy and thicker.
  3. Fold into your sweetened condensed milk mixture until combined and consistency is fluffy. Add in one cup of toasted coconut flakes.
  4. To make the whipped cream, whip up your heavy whipping cream using a mixer or milk frother until it’s thick and creamy and fluffy. Add your powdered sugar and vanilla (optional)
  5. In your popsicle mold, fill them with a spoonful of your Sweetened Condensed Milk mixture about 1/4 the way full and then add a spoonful of your homemade whipped cream.
  6. Continue filling your popsicle mold with the two mixtures, going back and forth alternating between the popsicle mixture and the homemade whipped cream, imitating coconut cream pie.
  7. Top each mold with toasted coconut and add your popsicle sticks. Freeze in the freezer for 6-8 hours or overnight.
  8. Let freeze. To remove them from the mold, run under hot water for a few seconds and gently pull on the popsicle sticks until the popsicle releases.
  9. Roll or sprinkle each popsicle (optional) into toasted coconut flakes.
  10. Freeze to stay firm! Serve, share and enjoy!!
