Method
- Preheat your oven to 350°F and line your baking sheet with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it's melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In a large bowl, add your butter and sugars, and whisk until combined.
- Add your eggs and vanilla bean paste. Whisk again until fluffy.
- Next, add your cocoa powder, flour, corn starch, baking soda, baking powder and salt. Fold until just combined.
- Scoop out your cookie dough into 1-2 inch balls, flatten it out and add one marshmallow (or 5-6 minis.) Wrap your dough around the marshmallow. (It’s ok if a little bit of the marshmallow is peaking out.) Continue with the rest of your dough and marshmallows.
- Place your cookie dough ball on your baking sheet a few inches apart ( to prevent from spreading into each other) and bake in the oven at 350°F for 8 to 10 minutes. Don’t overbake as your marshmallows could burn easily.
- Using a round cookie cutter or glass, to scoot around your cookies if they spread and to make them all round.
- Remove from oven and top with chocolate chips, Hersheys milk chocolate, and graham cracker pieces.
- Add flaky sea salt on top, share, and enjoy!!
Notes
Can I use mini marshmallows?
YES. You can use one full marshmallow for a super fluffy marshmallow filled cookie, 5-6 mini marshmallows if that's what you have on hand, or a half of a marshmallow for a less sticky cookie. hehe
My cookies are sticking to the pan cause the marshmallows, what do I do?
FIRST- make sure your cookies are cooled before trying to move them cause the marshmallow will stick if they are still hot and melty.
Once cooled, the best way I felt to remove them from the parchment is by twisting them slowly to release any marshmallow on the bottom of the cookie.
You could also use just half of a marshmallow to stuff your cookies, like mentioned before, if you'd like less marshmallow.
