Method
For Sugar Cookies:
- Line a baking sheet with parchment paper and pre heat your oven to 350° F.
- In a large bowl, add your softened butter, sugar and brown sugar and stir until well combined.
- Add your eggs and vanilla bean paste (or extract) and stir again.
- Then, add your flour, baking powder, baking soda,corn starch and salt and fold until dough forms.
- Using a cookie scoop, scoop out your cookie dough and roll it in some sugar and place on baking sheet lined with parchment paper.
- Bake in the oven at 350° F for 8-10 minutes until edges start to turn golden brown. Remove from oven and let cool.
For Cream Cheese frosting:
- In a large bowl of a mixer, add your butter and cream cheese and beat until blended together and starts to get light and fluffy. About 5 minutes.
- Add your vanilla and salt and slowly add your powdered sugar, mixing after each addition.
- Last, add your heavy whipping cream and beat it in until combined.
Assembling your Cookies:
- Once your cookies have cooled, take some of your cream cheese frosting and add a swirl of frosting onto each cookie using an offset spatula.
- Cut your blueberries in half and your dice your strawberries.
- Add your fruit onto the cookie in a pattern that resembles an American flag.
- Continue with the rest of your cookies and then share and enjoy!!
