White Chocolate Coconut Macadamia Nut Cookies

It’s day four of my 12 days of Christmas cookie series!! I am so excited to be doing this series. I absolutely love baking Christmas Cookies so this series is my absolute favorite. Last year was my first time doing this series and I’m so happy to be doing it again this year!!

These videos are shared on my tiktok and instagram and it’s so special to see you guys make the recipes!! It makes me so happy!! To see people making the cookies from the series for their loved ones is the best!! The favorite from last year was definitely my Hot Cocoa Cookies. One of my close friends, suggested I make a White Chocolate Macadamia nut cookie so I decided to do it!! White Chocolate Macadamia Nut Cookies are a classic but I also feel like they are under rated. AND these ones, wow. They were so good. I also added toasted coconut flakes which made them even better.

So far in the series this year, I have done Oatmeal Chocolate Chip Cookies, Peanut Butter Chocolate Marbled Cookies, Cranberry Orange Muffin Top Cookies and now these!! I would absolutely LOVE IT if you tried any of the flavors. It’s honestly so cool to see people make my recipe and share with their friends and family. I grew up baking so it’s something special.

Christmas is one of my favorite times of the year, no it is my favorite. Haha!! I love baking all year round but there is something special about baking around Christmas time. I grew up making Christmas cookies and decorating sugar cookies so there is something so nostalgic about baking this time of year.

This year, I went to Hawaii with my mom and sister for a late senior trip. Hawaii is such a beautiful state. I remember thinking, “when I get home, I want to make a cookie inspired by Hawaiian flavors.” Although these cookies don’t include pineapple which is such a beloved flavor in Hawaii, (be on the lookout btw) they have a delicious hawaiian theme. Coconut, macadamia nuts, and white chocolate make these cookies just amazing. I’m SO excited for you to try them out!!

What you’ll need:

  • butter, unsalted
  • brown sugar
  • sugar
  • vanilla extract
  • eggs
  • cornstarch
  • baking soda
  • salt
  • flour
  • sweetened coconut flakes, toasted
  • chopped macadamia nuts, toasted
  • white chocolate chips
  • chopped white chocolate bars
  • flaky sea salt

All the ingredients in this cookie recipe are so easy to find, whether that’s in your pantry or refrigerator already or at your local near by grocery store. Sweetened coconut flakes and macadamia nuts can be found in the baking isle. The coconut will be more towards the mix ins, like chocolate chips or maybe near marshmallows. The macadamia nuts can obviously be found near the nuts.

Toasting the Coconut and Macadamia Nuts:

Do you have to toast the coconut shreds and macadamia nuts? Is it absolutely 100% worth it if you do? YES!! Although it’s not a requirement to toast the coconut shreds and macadamia nuts in the recipe, (like they would still turn out) it definitely adds SO much FLAVOR and texture.

I don’t know if you’ve ever had toasted coconut before but let me just say, IT’S AMAZING!! The crunchiness and the toasty flavor. I just cant get enough. AND of course goes with the nuts as well. Toasting nuts when using them in a recipe ALWAYS makes it better. It brings out the flavor.

HOW TO TOAST THEM: Toasting your coconut shreds in SO easy. All you do is pre-heat your oven to 350 degrees (same temp as for the cookies) and add your coconut shreds into a small oven safe dish for about 5-8 minutes until desired toastiness. Be careful not to walk away cause it could easily burn fast if forgotten about. Do the same for your macadamia nuts. It’s simple and easy but the results are huge so it’s SO worth taking the extra step.

White Chocolate Coconut Macadamia Nut Cookies

These soft and chewy White Chocolate Macadamia Nut Cookies are so delicious. They are packed with flavor and the perfect crunch. The toasted coconut and toasted macadamia nuts add such a wow factor.

Ingredients Method

Ingredients
  

  • 1 cup butter 2 sticks, unsalted, softened
  • 1 cup brown sugar
  • 1/2 sugar
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups flour
  • 1 cup coconut flakes sweetened, toasted
  • 1 cup macadamia nuts chopped, toasted
  • 1 1/2 cups white chocolate separated
  • 1/2 cup chopped white chocolate bars
  • flaky sea salt

Method
 

  1. Pre-heat oven to 350℉ and line your baking sheets with parchment paper.
  2. Toast your coconut shreds in a small baking dish for 5-8 minutes in the oven. Watch carefully as they could burn easily. Do the same with your macadamia nuts. (doing this, adds so much flavor) Remove from oven and let cool.
  3. In a large bowl, cream together your butters and sugars until light and fluffy. Add your eggs and vanilla extract. Mix until well combined.
  4. Add your flour, cornstarch, baking soda and salt and mix until just combined.
  5. Pour your sweetened toasted coconut shreds, toasted chopped macadamia nuts, and white chocolate chips into your cookie dough. Save a little bit of each for the tops of the cookies.
  6. Scoop your cookie dough out into 1-2 inch balls and place on your baking sheets lined with parchment paper a few inches apart. Top with extra toasted coconut, nuts and white chocolate chips and well as your chopped white chocolate bar.
  7. Bake for 8-10 minutes until cookies start to get golden. Remove them from the oven and let cool. Top with flaky sea salt if desired.
  8. Let cool, serve, share and enjoy!!

That’s it!! These Cookies are seriously one of my favorites ever. They are so flavorful and have the best bite because all of the add ins. I am SO excited for you guys to try them!!
