They say that breakfast is the most important of the day, right? Well these veggie breakfast tacos are fresh, easy to make, nutritious, and take less than 30 minutes to make!! They make for the perfect breakfast and I hope you love them as much as I do.
The possibilities of breakfast foods often seem ENDLESS. There are SO many different breakfast foods that we all know and love. BUT sometimes we just want something quick and refreshing but still filling and nutritious. These veggie breakfast tacos are so simple and easy to make and SO good.
It’s such an easy and simple meal but you and your family will love them. With a crispy tortilla, scrambled eggs and fresh veggies these are the perfect breakfast tacos. One thing I love about these veggie breakfast tacos is how customizable they are. You could add lettuce, spinach, cucumbers, tomatoes, and any other vegetables you like. You can also use whatever kind of cheese you like and whatever kind of herbs you like as well. These honestly were so yum and I love how you can change them to your liking or make them exactly as the recipe says.
Fun fact about me is that I’m a picky eater… ok, ok I guess that’s not really a “fun fact” and you’re probably wondering how I have a food blog if I’m a picky eater and my answer to that… Is chocolate. HAHAHA everyone loves chocolate so if I post about chocolate, I hope my blog will be successful. Like I know it’s not everyones favorite but I mean, c’mon.
Ok, enough jokes. Basically I used to be so picky that I didn’t even like simple foods like rice, scrambled eggs, and corn. Now I love all of those simple foods because I simply just tried them. The funny thing about when I started liking eggs is that I literally just made myself try them a few times and then once I got used to them I STARTED CRAVING THEM. It was weird because scrambled eggs with cracked pepper became the 2nd most food I craved. 2nd to chocolate and cookies of course…
How I make my scrambled eggs: I usually add about 2-4 eggs into a bowl, add a dash or two of milk or heavy cream, some salt and pepper and then whisk the egg mixture up until its super foamy and smooth and the yolks and whites are fully broken up. Then I transfer them over to my non-stick pan over medium high heat and use a silicone spatula to stir while they cook. It’s so easy to make and they are healthy for you. Gotta get that protein in!!
What you’ll need:
- mini tortillas
- eggs
- heavy cream
- salt & pepper
- lettuce
- cucumber
- cilantro
- shredded cheese
- sour cream
Veggie Breakfast Tacos
Ingredients
- 6-8 mini tortillas
- 4-6 eggs
- ¼ cup heavy cream
- salt & pepper
- 1 head lettuce chopped
- 1 cucumber chopped
- cilantro chopped
- 1 cup shredded cheese
- sour cream
Instructions
- In a medium sized bowl whisk your eggs and heavy cream until fluffy and season with salt and pepper to your liking.
- In a saucepan over medium heat cook your eggs. I made mine scrambled.
- Heat your tortillas in the pan with some olive oil.
- Once you tortillas and eggs are done, you’re ready to assemble.
- Add your eggs, chopped lettuce and cucumbers, cilantro, and cheese to your tortillas.
- Top with a dollop of sour cream.
- Customize to your liking, share and enjoy!
