Spooky Brown Butter Chocolate Chip Cookies

If you’re looking for a quick and delicious dessert to make for spooky season, these spooky brown butter chocolate chip cookies with halloween m&ms are for you. They are gooey, soft and filled with puddles of chocolate. Not to mention they are made with brown butter which gives these cookies a deeper flavor.

My hope for this recipe is to bring a smile on your face as you make them as well as every single person who takes a bite. They are so yum and once you make them, there is no going back.

What you’ll need:

  • butter
  • sugar
  • brown sugar
  • eggs
  • vanilla extract
  • ground vanilla bean
  • salt
  • flour
  • cornstarch
  • baking soda
  • chocolate chips
  • halloween m&ms
  • flaky salt

What is brown butter? Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it its delicious deep nutty flavor. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back. It’s super simple to make so the extra step is optional but 100% worth it.

To be honest, I’m not the biggest fan of halloween BUT I do love fall and pumpkins and jack o lanterns and candy and dressing up. AND let’s be real, I’m not going to pass up any opportunity to make cookies.

Spooky Brown Butter Chocolate Chip Cookies

Ingredients
  

  • Ingredients:
  • 1 cup butter 2 sticks, browned
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1/2 tsp ground vanilla bean optional
  • 2 1/2 cup flour
  • 1 tbsp cornstarch
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup chocolate chips
  • 1 cup spooky colored M&Ms
  • flaky sea salt

Instructions
 

  • Pre-heat your oven to 350 degrees and line your baking sheets with parchment paper.
  • In a medium sized sauce pan on medium high heat add your butter and let it melt. Once its fully melted, keep watching it as it starts to bubble up and turn to a brown amber color. Stir it occasionally. When your butter is brown in color, has a nutty caramel smell and has brown bits at the bottom, it's ready! This process will take 5-10 minutes. Let cool.
  • In a large bowl add your sugar and brown sugar and stir it up. Slowly pour in your brown butter and mix again. Next add your eggs and vanilla and stir again until well combined. (Be sure to let your brown butter cool a little before adding your eggs.)
  • Add your dry ingredients to this mixture and fold until incorporated. Dough should be soft in texture. Next, add your chocolate chips and halloween colored m&ms and fold until combined,
  • Scoop your cookie dough into 1-2 inch balls onto your baking sheets lined with parchment paper a couple inches apart. Top with extra chocolate chips and m&ms and place in the oven for 8-10 minutes at 350 degrees.
  • Remove from oven and top with flaky sea salt. Let cool, share and enjoy your cookies!

Notes

brown butter- browning your butter is optional is this recipe and your cookies will still turn out if you skip this step. It does make these cookies so much better and I fully believe that you can do it and will not regret it if you decide to try it out!

    What type of flour? Salted or unsalted butter? Helpful to specific for those who don’t bake!

      Hey there, thank you for reaching out with your questions!! Happy to answer any you have!! For these cookies, and most of my cookie recipes, I use all purpose flour. As for the butter you can use either!! Just if you use salted, leave out about half the salt called for in the recipe!! Enjoy and happy baking 🙂

    I followed the directions exactly and the dough was dry and crumbly. When I baked them they didn’t flatten out. I’m not sure what the purpose of the cornstarch – I think maybe that’s part of the problem. And maybe too much flour. Bummer :(. Your look beautiful.

      It could have been the temperature of your dough or possibly how you measured the flour causing it to be too much. This was also one of my first recipes on my blog so I will check the recipe and update it as well.
