Fall is here and that means it’s up to us to put the smells of pumpkin and cinnamon in the air. Well this recipe does just that! When I took these out of the oven, my older sister said ”whats that smell? It smells like cinnabon.” and I told her, “Thats the nicest thing you’ve ever said to me.” HAHA
These cookies truly are so delicious and take almost no time to make and I fully believe you can make them. I mean c’mon, what’s better than cinnamon and pumpkin during this time of year.
What You’ll need—
- Butter
- Brown Sugar
- Sugar
- Eggs
- Vanilla Extract
- Pumpkin Puree
- Flour
- Cornstarch
- Baking Soda
- Cinnamon
- Pumpkin Pie Spice
- Salt
- Vanilla Ice Cream

Can I make these cookies without the skillet?
Yes, you can bake these cookies normally on a sheet pan! This recipe was made for them to be skillet cookies so they may not be the ideal texture outside of it but will still make for some delicious cookies.
Pumpkin Snickerdoodle Skillet Cookies
Ingredients
- 1 cup butter (browned)
- 1 1/4 cups brown sugar
- 1/2 cup sugar (separated)
- 1 egg + 1 egg yolk
- 1 tbsp vanilla extract
- 1/2 cup pumpkin puree
- 3 cups flour
- 2 tbsp cornstarch
- 1 tbsp baking soda
- 2 tbsp cinnamon (separated)
- 1 tsp pumpkin pie spice
- 1 tsp salt
- vanilla ice cream (optional)
Instructions
- Preheat your oven to 350° and prepare you mini skillet pans by greasing them so your cookies do not stick.
- In a large bowl add your browned butter, brown sugar and 1/4 cup of the sugar and mix until combined. Let your brown butter cool down a little bit before adding more ingredients.
- Next, add your your egg, egg yolk, pumpkin purée and vanilla and whisk until well combined.
- Add your flour, cornstarch, baking soda, 1 tbsp of the cinnamon, your pumpkin pie spice & salt into your mixture. Stir until just combined.
- In a small bowl add remaining sugar and cinnamon to make a cinnamon sugar mixture.
- Once your dough is ready, add two scoops of cookie dough (about 1/4 cup) into each skillet, sprinkle with your cinnamon sugar and bake at 350° for 8-10 minutes.
- Remove from oven and let cool. Add your vanilla ice cream (or ice cream of choice), and sprinkle with some extra cinnamon.
- Share and enjoy your delicious fall cookie.
