I don’t know about you, but I love fall. The season of warm spices and cozy feelings is just the best. There is just something about the last few months of the year that is so special.
Whipping up pumpkin french toast sticks will make your autumn mornings as cozy as ever. They will definitely get you in the fall mood. They are easy to make and can be whipped up super quick with only a handful of ingredients.
Breakfast is one of my favorite meals to make. Pancakes, home fries, scrambled eggs, waffles, yogurt, french toast. I love it. What better than to do a fall inspired french toast stick recipe? Pumpkin and cinnamon and MAPLE. AHHH nothing beats the flavors of fall. Especially in a breakfast recipe.
These pumpkin french toast sticks would be the perfect back to school snack, thanksgiving morning breakfast or the perfect treat for that crisp autumn day. Honestly anyday, these would be a great treat. They are so delicious.
These can be enjoyed with whipped cream or without. I made mine with Truwhip original whipped topping. It’s so good and creamy. There are no added colors or preservatives and no high fructose corn syrup.
What you’ll need:
- brioche style bread
- eggs
- milk
- cinnamon
- pumpkin puree
- pumpkin pie spice
- pure maple syrup
That’s it. These ingredients can all be found in your pantry or at your local grocery store. It’s only a handful of ingredients but they are so yum and easy to make. You can add more toppings, like whipped cream, butter, cinnamon, pumpkin butter. syrup or whatever you’d like. or you can just dip them in pure maple syrup and call it good. Either way, these will be fantastic.
How to make these:
- In a medium sized bowl or small baking dish, all you do is whisk together your eggs, milk, pumpkin puree, and cinnamon.
- Cut your bread into strips and dip into your egg and milk mixture.
- Cook them on the stove in a pan until cooked through and slightly crisp.
- Dip or drizzle with pure maple syrup.
- Top with additional toppings if desired.

Pumpkin French Toast Sticks
Ingredients
- 1 egg
- 1/4 cup pumpkin puree
- 1/2 cup milk
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 6 slices brioche bread
- pure maple syrup
Instructions
- In a bowl, add your milk, egg, pumpkin puree, cinnamon, and pumpkin pie spice and whisk until combined.
- Head up a pan on medium heat.
- Slice your brioche bread slices into 4 pieces (sticks) and then dip them in your wet mixture and place on your warm pan. You can do 4-5 sticks at a time.
- Let cook on each side for about a minute and continue to flip your french toast sticks a couple times until they are fully cooked. You can cover your pan to cook them more thoroughly.
- Once they are cooked, remove them from your pan using a spatula and continue the process with the rest of your bread and mixture.
- Top with syrup and a dash a cinnamon, serve, share, and enjoy!! You can also dip them in Truwhip as well!!
