Butterscotch is one of those classic yet under-rated flavors. Growing up, every once in awhile I would have a dessert with butterscotch in it and I always thought it was so good and unique.
These cookies are so soft, chewy and flavorful. The oatmeal give these cookies the perfect chewy texture and the butterscotch add so much flavor. I love sprinkling a dash of sea salt on these cookies to help balance out the sweetness. SO good.


This recipe is super easy to make and can be whipped up super fast. All you do is add all of your wet ingredients in a bowl until well combined, then add your dry ingredients and mix again. After that, you just add your oats and butterscotch chips and your dough is ready to bake.
I got inspiration for these Oatmeal Scotchie Cookies at a cool cookie shop I want to try but loved the idea of an oatmeal butterscotch cookie and had to try them out!!

These Oatmeal Butterscotch Cookies would be perfect for summer time to share with family and friends, great for fall cause they are warm and delicious and also the perfect Christmas Cookie to share with your loved ones.

What You’ll Need:
- butter
- brown sugar
- sugar
- eggs
- vanilla bean paste (optional)
- vanilla extract
- cornstarch
- baking soda
- baking powder
- salt
- all purpose flour
- oats
- butterscotch chips
- flaky sea salt
- parchment paper
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun cookie and I’m so excited for you to try them out.

Oatmeal Scotchie Cookies
Ingredients
- 1 cup butter 2 sticks, softened
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1/2 tsp vanilla bean paste optional
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1 tsp baking powder
- 3/4 tsp salt
- 2 1/2 cups all purpose flour
- 1 cup oats
- 1 1/2 cups butterscotch chips
Instructions
- In a large bowl, cream together your softened butter, brown sugar and sugar until well combined.
- Add in your eggs and vanilla extract and mix until well combined.
- Add in your flour, baking soda, cornstarch, salt, oats and stir until well incorporated. Mix in your butterscotch chips.
- Scoop out your dough into 1-2 inch balls and place on baking sheet lined with parchment paper a few inches apart.
- Bake at 350℉ for 8-10 minutes until golden brown. Remove from oven and top with extra butterscotch chips and flaky sea salt.
- Let cool, share and enjoy!!
