AHHHHH it’s here!!! My 12 days of Christmas cookie series is back!! It’s DAY ONE!! I am so excited to be doing this series. I absolutely love baking Christmas Cookies so this series is my absolute favorite. Last year was my first time doing this series.
I posted the videos on my tiktok and instagram and so many of you made the recipes!! It made me so happy to see people making the cookies in this series for their loved ones. These cookies are so good. They are such a simple yet perfect cookie. They’re so nostalgic. Chocolate chip Oatmeal cookies are such a good Christmas cookie because you know everyone will like them. They are chewy, soft, chocolatey and the flaky sea salt adds the perfect bite.

Christmas is THE BEST time of year. There is so much joy and fun and it brings out the best of people. I love the season and spirit of Christmas. I always say “The Christmas Spirit is the Holy Spirit.” Families gather, people work hard to give to others and one of my favorite parts of the holidays is the food. Baking around Christmas is so fun and nostalgic.
Cookies are one of the most easy (yet delicious) things to make once you get them down. When i first started baking and learning to make cookies I had a lot of random mistakes. Like flat cookies, burnt cookies, and cookies that spread into each other. But once you practice, have a good recipe and learn a little bit about whats causing these issues your cookies will be PERFECT in no time!!
What You’ll Need:
- butter
- brown sugar
- sugar
- eggs
- vanilla extract
- baking soda
- cornstarch
- salt
- flour
- oats
- chocolate chips
- flaky sea salt (optional)
This recipe is seriously so simple and easy to make. Even if you’re not a baker, you can still make these!! AND please reach out to me on instagram if you have any questions regarding my recipe!! All the ingredients in these cookies can be found in your pantry or kitchen or EASILY at your local grocery store. Yes they are simple, but man are they GOOD!!

Oatmeal Chocolate Chip Cookies
Ingredients
- 1 cup butter (softened)
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 1/2 cup flour
- 1 cup oats
- 2 tsp baking soda
- 1 tbsp cornstarch
- 1 tsp salt
- 11/2 cup chocolate chips
Instructions
- In a large bowl, cream together your softened butter, brown sugar and sugar until well combined.
- Add in your eggs and vanilla extract and mix until well combined.
- Add in your flour, baking soda, cornstarch, salt, oats and stir until well incorporated. Mix in your chocolate chips.
- Scoop out your dough into 1-2 inch balls and place on baking sheet lined with parchment paper a few inches apart.
- Bake at 350℉ for 8-10 minutes until golden brown. Remove from oven and top with extra chocolate chips and flaky sea salt.
- Let cool, share and enjoy!!
