St. Patrick’s Day is such a fun holiday. It’s a great sign that spring is coming, and the decorations are so fun. ALL the green, and the colors and the leprechauns, and the clovers!! I love holidays and being able to create delicious desserts to celebrate them.

There are so many kinds I’m obsessed with and it’s literally the fastest and easiest food to make. Whether it’s for breakfast, lunch, a quick snack or even your way out of cooking dinner, cereal will have your back. It’s like the possibilities are endless. Especially when baking with cereal or using it as an ingredient.
LUCKY CHARMS are the star of this dessert. Its used in the cookie dough, the buttercream frosting and topped with some as well. And let’s be honest, Lucky Charms cereal is one of the most well loved cereals, especially around St.Patty’s Day!!

When I first started baking 7 years ago, I made a video on my youtube channel where I made St. Patrick’s day treats and of course, looking back it is so cringey yet still so fun. I made chocolate pretzels in the shape of clovers, chocolate cupcakes with gold and rainbow sour strip candies to look like pots of gold and then I made a “leprechaun bait” treat that’s like a cereal mix. So yum!!
These cookies would be perfect for so many things. To pack something fun and festive in your kids lunch, bring to a fun St.Patrick’s day party, a family gathering, potluck, birthday party. So many fun options. (P.S. you could even switch the cereal out with another kind and use it for another theme.)
Mainly all my recipes contain ingredients that are super easy to find or that you probably will already have in your kitchen!! Here is a list of everything you’ll need to make these cookies.
What You’ll Need:
- butter
- sugar
- brown sugar
- eggs
- vanilla extract
- sour cream
- flour
- cornstarch
- baking soda
- salt
- heavy cream
- powdered sugar
- marshmallow cereal (I used lucky charms)
These cookies are so easy to make and “magically delicious.” If you like Lucky Charms cereal than these cookies are even better for you. Desserts inspired by holidays are absolutely so fun and memorable. I hope this recipe will bring such great memories to your family and close friends and bring a smile to everyone who takes a bite.
LET’S GET STARTED!!
Marshmallow Cereal Cookies
Ingredients
For Cookies:
- 1 cup butter 2 sticks, softened
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 egg +1 egg yolk
- 1 tbsp vanilla extract
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp cornstarch
- 2 1/2 cups flour
- 1 cup marshmallow cereal crushed
For Frosting:
- 1/2 cup butter
- 3 1/2 cups powdered sugar
- 2 tbsp heavy cream
- 1 tbsp vanilla extract
- pinch of salt
- 1/4 cup crushed marshmallows
Instructions
For Cookies:
- Preheat oven to 350° and line your baking sheets lined with parchment paper.
- In a large bowl, add your butter, sugar, and brown sugar and cream until combined and light and fluffy in texture.
- Add your egg, egg yolk, vanilla extract and sour cream and stir again.
- Next, add your baking soda, salt, cornstarch and flour and mix until combined. Mix in your crushed cereal.
- Scoop or roll your cookie dough into 1-2 inch balls, place on parchment paper lined baking sheets and bake at 350° for 9-10 minutes.
- Remove from oven and use a round cookie cutter to pull the edges of the cookies in. Let cool.
For Frosting:
- In a large bowl add your butter and whip up until fluffy.
- Add your salt and vanilla and whip again.
- Next, add your powdered sugar and whip up. Pour in some of your heavy whipping cream until you reach your desired consistency.
- If frosting is too thick add more cream and if it’s too runny add more powdered sugar.
Assemble:
- Add your crushed marshmallows and fold in carefully.
- Transfer your frosting to a piping bag with a round tip and frost your cookies. You can also just use a icing knife to spread it on as well.
- Top with extra marshmallows, share and enjoy!
