It’s October and you know what that means. It’s the heart of fall and all the fun activities. I love how seasons change and birth new traditions and memories and always give us something to look forward to.
One of my favorite things about fall is the activities and memories I have growing up with my family. Carving pumpkins on our big family island, raking leaves and cancelling all our hard work by jumping in them, buying all the fall scented wax melts I could get my hands on and of course dipping caramel apples and covering them with nuts and mini chocolate chips. So many memories I will cherish that bring happiness to my life.
With these cookies I want to bring families and friends together to create new traditions and fun activities that last a lifetime. You can do this with your kids as a fall activity or with your friends to enjoy the season. The faces are so customizable so you can cut them out how I did, or you could even cut them out all different! You could even keep them cutie pumpkins. The possibilities are endless.

There is so much to enjoy during the fall. I grew up in Ohio and autumn was my favorite season. The smells, flavors, the fashion and colors, I just adored it all. I now live in Florida and miss the season so heavily but thankfully can still enjoy the activities here and visit the chilly weather yet still come back to the hot climate of Florida… and believe it or not, I have seen some changing trees here which has been good!
Jack O Lantern Sugar Cookie Sandwiches
Ingredients
For Cookies:
- 1 cup of butter
- 1 cup sugar
- 1/3 brown sugar
- 1 egg
- 1 tsp vanilla
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Orange food coloring
For Chocolate Filling:
- 1/2 cup heavy cream
- 1 cup chocolate chips
Instructions
For Cookies:
- In a large bowl add your butter and sugars and beat until combined. Next, add your eggs and vanilla and beat again.
- Once your wet ingredients are combined, add your dry ingredients and mix until dough forms. Add your orange food coloring and food until evenly distributed.
- Â Let your cookie dough chill for about 30 minutes to an hour to firm up so you can roll it out.
- Roll your cookie dough out and cut out cute pumpkin shapes and Jack o lantern faces. Make sure you cut faces out faces on half of the cookies. Let chill in the freezer for 15 minutes then bake in the oven for around 10-12 minutes. Let them cool.
For Ganache:
- Measure your heavy cream in a glass measuring cup and heat in the microwave was about 30-60 seconds.
- In a small bowl add your chocolate chips and slowly pour your hot heavy cream on top.
- Let set for a couple of minutes and stir until combined. This will be your filling.
Assemble:
- Once your cookies and ganache have cooled down you are ready to assemble. On your cookie with the face spread a spoonful of chocolate ganache. Sandwich your other cookie on top. Do this with the rest of your cookies. Enjoy!
