If you are a fan of peanut butter than you will love these. They may seem more complicated to make but honestly are SO easy and quick to make. These homemade nutter butters are soft, chewy, filled with delicious creamy peanut butter filling and not to mention, LOOK HOW CUTE they are too!!
Have you ever had nutter butters? Those crunchy store-bought peanut butter cookies in the red package that are honestly so yum but filled with not so normal ingredients. WELL, I’m so excited to be sharing this recipe for HOMEMADE nutter butters that you can make at home. And although I wouldn’t say they are “healthy” you can at least know what is in them.

All you do to make these are whip up the peanut butter cookie dough and when you scoop them break them in half or pinch in the middle to make a little peanut nutter butter shape and then use a fork to create the cute little criss cross pattern on the top. You can dip your fork in some sugar to keep the cookie dough from sticking to it when you press the pattern.
When you bake them they will spread and become bigger. To keep their shape, just use the edge of your fork to push the edges in a little bit and keep your nutter butter shape. Once they cool you fill them with the peanut butter filling and slightly squish together and you have the PERFECT homemade nutter butter sandwich cookies.

These peanut butter cookie sandwiches would be the perfect weeknight recipe to make when you’re craving something sweet. ORRR for a fun weekend get together with your family or friends. They can be whipped up in no time and are sooo tasty and flavorful.

What You’ll Need:
- butter
- peanut butter
- brown sugar
- sugar
- eggs
- vanilla extract
- all purpose flour
- cornstarch
- baking soda
- salt
- powdered sugar
- heavy whipping cream
- parchment paper

Homemade Nutter Butter Sandwich Cookies
Ingredients
For Cookies:
- 1/2 cup butter softened
- 3/4 cup peanut butter
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 1/2 cups flour
- 1 tbsp cornstarch
- 1 1/2 tsp baking soda
- 1/2 tsp salt
For Filling:
- 1/2 cup peanut butter
- 1/4 cup butter
- 1 cup powdered sugar
- 1/4 cup heavy whipping cream
Instructions
For cookies:
- Pre heat your oven to 350° and line your baking sheets with parchment paper.
- In a large bowl, stir together your peanut butter, softened butter, brown sugar, and sugar until well combined.
- Add your eggs, and vanilla extract, and stir again until light and fluffy.
- Pour in dry ingredients, which includes your flour, cornstarch, baking soda, and salt.
- Stir until just combined.
- Using a small cookie scoop, scoop out your cookie dough, and break in two pieces or pinch in the middle to make a peanut shape. (Similar to nutter butters) Place on your cookie sheets lined with parchment paper.
- Using a fork, make the criss cross pattern on top of each cookie.
- Bake in the oven for 350° for about 8 minutes.
- The cookies will spread a little bit so if you’d like to use the edge of a fork to reshape them while they’re still hot you can.
- Let cool.
For Frosting:
- In a small bowl add your softened butter and peanut butter and mix until combined.
- Add your powdered sugar and mix again.
- Pour in your heavy whipping cream and stir until creamy.
- Transfer your frosting/filling to a little baggie or piping bag and cut the tip.
- When your cookies have cooled down, squeeze a little dollop on each section of your cookie and top with another cookie, slightly pressing them together.
- Be sure to not add too much filling where it would squish out the sides.
- Share and enjoy!!
