Popsicles are such an underrated summer treat. We are going to change that with this recipe!! These blueberry coffee popsicles are SO good and take only THREE ingredients. That’s seriously it. Whether you’re a gourmet chef or have never made something of your life, you can make these!! SO EASY.
If you love staying cool and energized in the summer and are looking for a quick and easy treat, I’m so happy you have found this recipe. It’s so fun and versatile. Although the flavor for this popsicle is blueberry, you could totally use another flavor of coffee and another fruit or add in.
I love that these popsicles aren’t overly sweet and sugar filled. They are still cool and sweet but not where its overwhelmingly sugary. I’m super excited though, to experiment with some other flavors so if you want to make homemade popsicles coming up, feel free to follow along.
This recipe only requires one mixture, the base of the popsicles. First you brew your fresh coffee and whisk it together with your whipped cream (whipped topping, Truwhip) Once they come together and the mixture is smooth you transfer if into your silicone popsicle mold, add your blueberries and freeze until solid.
What you’ll need:
- blueberry coffee (I used crazy cups)
- whipped cream or whipped topping (I used Truwhip)
- blueberries
- popsicle mold

Homemade Blueberry Coffee Popsicles
Ingredients
- 1 tub whipped topping (I used Truwhip)
- 1 cup blueberry coffee (I used Crazy Cups)
- 1/2 cup blueberries
Instructions
- In a large bowl add your whipped topping, blueberry coffee and stir together until well combined and smooth.
- Pour your mixture into a silicone baking mold and add a few blueberries in each one.
- Place in the freezer to freeze for about 4-6 hours or until firm.
- Push from the bottom and remove popsicles from the mold.
- Share and enjoy.
Notes
- Using a silicone popsicle mold helps remove your popsicles easier. If you are having trouble, try running them under warm water for a few seconds so they release from the mold easier.
- If they aren’t coming out at all, then place them back in the freezer to finish freezing.
