If you know me, you know that chocolate is my love language… It’s just so good and perfect. These cookies are just that. They are warm and soft and are filled with puddles of chocolate. I don’t know if it’s just me, but that sounds like heaven. Well actually I know that Heaven will be a lot better but this is as good as it gets here on Earth.
They are decadent, soft in the middle, chewy on the outside and perfect for any occasion. You, your family, your spouse or boyfriend or girlfriend, or kids or friends or honestly anyone who likes chocolate, will LOVE these.
I added a whole Ghirardelli chocolate on the top of these babies but also broke some up to add on top and just topped some of them with extra chocolate chips to be double chocolate chip cookies. What you’ll need:
- butter
- brown sugar
- sugar
- vanilla extract
- eggs
- cocoa powder
- flour
- cornstarch
- baking soda
- salt
- chocolate chips
- Ghirardelli Dark Chocolate sea salt Caramels
- flaky sea salt (optional)
What is Brown Butter and do I have to use it?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it its delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it. And yes, you can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.
Double Chocolate Caramel Cookies
Ingredients
- 1 cup butter 2 sticks, browned
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 2 1/2 cups flour
- 1/4 cup cocoa powder
- 1 tbsp cornstarch
- 2 tsp baking soda
- 1 tsp salt
- 1 cup chocolate chips
- dark chocolate sea salt caramels i used ghirardelli
Instructions
- Pre-heat your oven to 350 F and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In a large bowl add your brown butter, brown sugar, and sugar into a large bowl and stir until combined and light and fluffy in texture.
- Add your eggs and vanilla and whisk until combined. Mixture will get pretty foamy.
- In a medium sized bowl add your dry ingredients. So your flour, cocoa powder, cornstarch, baking soda and salt. Whisk until evenly combined and there are no clumps.
- Add your dry ingredients to your wet ingredients and fold until just combined. Pour in your chocolate chips and fold until evenly distributed.
- Scoop your cookie dough into 1-2 inch balls and place on your cookies sheets lined with parchment paper a few inches apart.
- Bake in oven at 350 F for 8-10 minutes. Remove from oven and scoot cookies with a mason jar lid or round cookie cutter to keep perfectly circular. (optional)
- While cookies are still warm top with a Ghirardelli dark chocolate sea salt caramel or extra chocolate chips. Top with flaky sea salt if desired.
- Let cool, serve, share and enjoy!!
