It’s thats time of year again. CHRISTMAS COOKIE SEASON!! I am so glad you are here and I hope this recipe makes you happy. This recipe has been requested so I’m so excited to share it with you all.
These Gingerbread cutout cookies have a soft and chewy texture and are packed with perfect amount of gingerbread flavor. They are quick and easy, fool proof recipe.

For the past few years, I have done a Christmas Cookie series called my 12 days of Christmas Cookie series and it is an absolute blast. I make 12 different Christmas Cookie recipes for you all to make and share with your friends and family and OF COURSE, make for Santa as well. I love doing this cookie series for the holidays and seeing you guys make them and enjoy them. It’s the best!!

This is my third year doing this series so if you are ever in need of Christmas Cookie recipe ideas, you’ve come to the right place.


Down below, I’m going to share some of my most favorite cookie recipes from the series. These recipes are so perfect to make for the holidays and I hope you find some you want to make this year:

These recipes are great to make for Christmas cookie swaps, holiday parties, family get togethers, office Christmas parties, with your boyfriend, girlfriend, best friends or loved ones or just to make on a cold winter evening to enjoy while watching your favorite Christmas movies. You can even make them with your kids and they would love it!!

Baking around Christmastime is so special and nostalgic. Some of my earliest memories baking, was decorating Christmas cookies with my family around Christmastime and that’s one thing that sparked my love for baking. Listening to Christmas music and eating Christmas Cookies and milk for breakfast.
These gingerbread cookies would be perfect to make with your family to decorate with frosting and sprinkles and chocolate chips and have a fun christmas cookie decorating party!! They’re also SO good on their own. My family kept eating them cause I made them the night before I made the frosting.


One baking hack I LOVEEEE using for decorating cookies is using a cupcake pan to hold all the different sprinkles and toppings. You can line the tin with cupcake liners and then fill each one with a different ingredient to decorate with. This is such a fun and cute way to setup your sprinkles and the possibilities are endless. PLUS makes for such an easy cleanup which is so nice.
Here is a list of ideas of what you could use to decorate your gingerbread cookie cutouts:
- buttercream frosting
- Christmas sprinkles
- mini marshmallows
- chocolate chips
- red hots
- rainbow sprinkles
- pretzels
- candy canes or peppermints
- rainbow coated chocolate chip sprinkles
- Christmas non perils
- sanding sugar
- white chocolate chips
- mini chocolate chips
- other candies

This gingerbread cookie recipe is super soft and chewy but still hold the shapes pretty well. They do spread a little but honestly are so good. If you wanted them to spread less you can even chill them in the freezer before baking to help them hold their shape but either way they are delicious.
To make them all you do is add all of your wet ingredients in a mixing bowl to combine then add dry ingredients until you dough forms. If your dough is too sticky you can chill it for a little bit before rolling out. Then you roll out your cookie dough on a floured surface and cutout with you Christmas cookie cutter shapes. Bake, decorate and ENJOY!!

What You’ll Need:
- butter (unsalted)
- brown sugar
- sugar
- eggs
- molasses
- ginger
- cream of tartar
- salt
- nutmeg
- cinnamon
- baking soda
- cornstarch
- flour (all purpose)
- cream cheese
- powdered sugar
- heavy cream
- vanilla bean paste
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.


Cutout Gingerbread Cookies
Ingredients
- For Cookies:
- 1 cup butter 2 sticks browned, unsalted
- 1 cup brown sugar
- 1/3 sugar
- 1 egg + 1 egg yolk
- 3 tbsp molasses
- 1 tsp vanilla bean paste
- 1/2 tsp ginger
- 1/2 tsp cream of tartar
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1 tbsp cinnamon
- 1 tsp baking soda
- 1 tbsp cornstarch
- 2 3/4 cups flour all purpose
- For Cream Cheese Frosting:
- 8 oz cream cheese 1 block
- 1/2 cup butter 1 stick
- 5-6 cups powdered sugar
- 1/4 cup heavy cream
- 1 tsp vanilla bean paste
Instructions
For Cookies:
- Pre-heat your oven to 350℉ and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted, keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns an amber brown color. Transfer into a glass measuring cup and let cool.
- In a large bowl add your cooled browned butter, brown sugar, and 1/3 cup of your sugar and stir until well combined.
- Add your egg, egg yolk, vanilla extract and molasses and whisk until well combined and mixture is light and fluffy.
- Next, add all your spices and dry ingredients including your ginger, nutmeg, cinnamon, baking soda, cornstarch, salt, cream of tartar and flour. Fold until just combined.
- Transfer your cookie dough onto a floured surface and roll out until 1/2 inch thick. (If your dough is too sticky, you can chill it for 30 minutes in the fridge before rolling out.)
- Using your cookie cutters cutout your shapes and carefully transfer your cookies to your baking sheets.
- Bake at 350° for 12-15 minutes until it starts to set and turn golden.
- Remove from oven and let cool.
For Cream Cheese Frosting:
- Whip together your butter and cream cheese until well combined and fluffy.
- Add your heavy cream, vanilla bean paste, cinnamon, and powdered sugar and whip until it comes together.
- Decorate your cookies with your frosting using a spatula or piping bag fitted with a tip. Use chocolate chips, sprinkles and red hots to decorate and whatever else you'd like to use. You can also enjoy these cookies with no icing or toppings as well.
