We all know and love the classic peanut butter cookies, but why not switch it up with these cookie butter cookies made with Biscoff cookie butter, cinnamon and brown butter. Need I say more!?
Jump to RecipeCookies are one of my absolute favorite cookie recipes to create so these were so fun. They’re so simple to make, yet so yum. You can whip these up in one bowl and they can be ready in less than an hour. The process is simple but the flavors are phenomenal.
If you’re a fan of cookie butter, then you will LOVE these cookies. They’d be perfect to make for a family get together, a birthday party or just an evening in, when you’re craving something sweet. They remind me of a snickerdoodle a little bit which to me, is a plus.
What you’ll need:
- butter
- cookie butter (I used Biscoff’s)
- brown sugar
- sugar
- eggs
- vanilla extract
- flour
- cornstarch
- baking soda
- salt
- cinnamon
The ingredients for these cookies are most likely ingredients you already have in your pantry or kitchen. Super easy to find in stores. If you’re looking for cookie butter you can most likely find it at your local grocery store. I found mine at Publix but if you don’t live in a state with Publix I’m sure you could find it where you live. I used Biscoff cookie butter and I found it near the peanut butter isle.
What is Brown Butter and do I have to use it?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it its delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it. And yes, you can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.
Cookie Butter Cookies
Ingredients
- 1/2 cup butter (browned)
- 3/4 cup cookie butter (I used Biscoff cookie butter)
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 2 1/2 cups flour (I use all purpose flour)
- 1 tbsp cornstarch
- 2 tsps baking soda
- 1/2 tsp salt
- 1 tbsp cinnamon
Instructions
- Pre-heat your oven to 350° and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it's melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In a large bowl add your brown butter, cookie butter, brown sugar and sugar and mix until well combined. Add your two eggs and vanilla extract and mix again til it comes together and is light and fluffy in texture.
- Add your flour, cornstarch, baking soda, salt and cinnamon and fold until all the dry ingredients are incorporated.
- Scoop out your cookies and place on your baking sheets lined with parchment paper a couple inches apart. Bake for 8-10 minutes in a 350° oven.
- Remove from oven and let set. Cool for a couple minutes, share and ENJOY!!

Rachel Moore’s dad here. Made these twice in last 72 hours.
First time I mixed all ingredients by hand. Dough ended ups little heavy and grainy. Rachel’s oven turns out to cook hot too!
First batch felt a little heavy (and heavy on cinnamon).
Second batch was made with hand mixer, 2tsp of cinnamon and oven reduced to 335.
Perfect. Warm cinnamon flavor and slightly chewy. They seem to disappear before I can get them in a container!
Thanks for sharing. I’ve recently been baking a bit with some nut butters (try baking with a Chai Tea nut butter…. Amazing!)
FYI – I noticed that I could easily just use 1/2 of the Biscoff jar (to avoid having to measure).

Perfect! Just the right recipe I was looking for. Can’t wait to give these a taste. My kitchen smells like heaven! I used the Trader Joe’s cookie butter, a spoon of Jiffy for that roasted kick and lots of cinnamon. Even browned butter which is a must these days, you’re just playing without it.
