During the holidays sometimes we want nothing more than to make a batch of freshly baked cookies, cozy up and watch a christmas movie. Well if your ideal cookie is one that is full of flavor, soft and chewy and with warm holiday spices… than these are for you. These are a elevated take on your classic snickerdoodle cookie. They are soft and chewy spice cookies, rolled in cinnamon when they bake and topped with flaky sea salt.

Here’s what you’ll need:
- butter
- sugar
- brown sugar
- eggs
- vanilla extract
- flour
- cornstarch
- baking soda
- salt
- cream of tartar
- cinnamon
- nutmeg
- ginger
- sea salt

The thing that makes these cookies different than normal snickerdoodles in that the recipe doesn’t call for just cinnamon. In this recipe I added cinnamon, nutmeg and a little bit of ginger which gives them the perfect bite. You could also even add some all spice, ground clove or pumpkin pie spice if you want even more SPICE. These would also be so good as a skillet cookie topped with vanilla ice cream or whipped cream. So yum and my sister said it made our home smell like cinnabon which I took as a major compliment. 🙂 These are also made with brown butter which takes these cookies from 1-10 in a snap!
What is Brown Butter?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it its delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back. It’s super simple to make so the extra step is optional but 100% worth it.

Chewy Spice Cookies
Ingredients
- 1 cup butter 2 sticks, browned
- 1 cup brown sugar
- 1/3 cup + 1/3 cup white sugar
- 1 egg + 1 egg yolk
- 1 tbsp vanilla
- 2 1/2 cups flour
- 2 tbsp of cornstarch
- 1 tbsp of baking soda
- 1 tsp of salt
- 1 tbsp + 2 tbsps of cinnamon
- 1/2 tsp of nutmeg
- 1/4 tsp of ginger
- 1 tbsp of cream of tartar
- flaky sea salt optional
Instructions
- Pre heat your oven to 350 degrees and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it's melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In a large bowl add your browned butter, brown sugar and 1/3 cup of white sugar and whisk until combined.
- Add your eggs and vanilla extract and whisk again. Whisk until your mixture is very light and fluffy and is almost foamy.
- Next, add your in your dry ingredients and spices. Your flour, cornstarch, salt, baking soda, cream of tartar, 1 tbsp cinnamon, nutmeg and ginger. Fold until everything is just combined.
- In a small bowl add your remaining 1/3 cup of sugar, 2 tablespoons of cinnamon and whisk together.
- Scoop out your cookie dough into 1-2 inch balls, roll in cinnamon sugar and place on your baking sheets lined with parchment paper a few inches apart.
- Bake at 350° for 8-10 minutes. Remove from oven when golden brown.
- Top with flaky sea salt, extra cinnamon sugar, let cool, and enjoy!!

I’m just about to print the recipe for the spice cookies. However, would you mind answering a question I have about them? I’m wondering if the cookies STAY soft or if they crisp up after a day?
Hi!! Of course! So they should stay pretty soft and chewy if they are stored in an air tight container though they may not be as soft as when they first come out of course. The dough can also be chilled if you’d like to make them whenever you’re ready to eat them but both should be good.
