Two of my ABSOLUTE favorite desserts, brownies and cookies, made into one delicious dessert?! PLUS ice cream. OK, talk about the perfect indulgence. Wow. Brownie Skillet cookies have the best of both worlds… or should I say the best of all three worlds.
If you’ve never had a skillet cookie, you’re in for a real treat. They are also sometimes called “pazookies” as in “pizza cookies.” You can get them at the restaurant BJs Brewhouse or you can make them at home!! They are super easy to make and you can bake them in one big skillet or miniature ones like I did in this recipe.
What I love with skillet cookies that are different from normal cookies is that they are thicker and gooey and are perfect to top with ice cream. They are just a huge indulgence for that late night sweet tooth, a double date night, sleepover with friends or to make with your family.
I have another skillet cookie recipe that is perfect for fall or if you want something warm and comforting. They are Pumpkin Snickerdoodle Skillet Cookies and it’s one of my absolute favorite recipes I’ve made. I’m not joking when I say they made my kitchen smell like cinnabon. SO GOOD. I love the brownie skillet cookies as well because it’s like a brownie and a cookie together.
What you’ll need:
- butter
- sugar
- brown sugar
- vanilla extract
- eggs
- flour
- cocoa powder
- cornstarch
- baking soda
- salt
- chocolate chips
- vanilla ice cream
One of my favorite family traditions is one that my family started 2 years ago. Every New Years Eve my family gets together to ring in the new year and celebrate. My older sister, Tiffany, and her family got the whole family mini skillets for Christmas and ever since then we started the tradition of making skillet cookies for New Years Eve. We make peanut butter cookie dough and chocolate chip cookie dough and maybe another flavor we want to make and everyone can choose their own flavor.
It’s such a fun tradition and I hope we can continue it as our family grows. Right now my family has grown from a family of 8 into a family of 16 (almost 17 cause my little sister is getting married!!) and I’m super excited to see how we keep and make new traditions, every year.
Let’s get started:
Brownie Skillet Cookies
Ingredients
- 1 cup butter 2 sticks, browned
- 1 cup brown sugar
- ½ cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 ½ cups flour
- â…“ cup cocoa powder
- 1 tbsp cornstarch
- 1 tsp baking soda
- ½ tsp salt
- 1 cup chocolate chips
- vanilla ice cream
Instructions
- Preheat oven to 350° and grease your mini skillets.
- In a large bowl add your butter and sugars and stir until combined.
- Add eggs and vanilla and stir until well combined and fluffy in texture.
- Add flour, cocoa powder, salt, baking soda, and cornstarch. Mix until just combined and add your chocolate chips.
- Press two scoops of cookie dough into your mini skillet until even.
- Bake in the oven at 350° for 8-10 minutes.
- Top with Vanilla Ice cream and enjoy.
