Welcome to my 12 Days of Christmas Cookie Series:

Every year, I do a Christmas cookie series in the months of November and December called my 12 days of Christmas cookie series. I share 12 new different Christmas Cookie recipes and you guys seem to love them AND I love doing it, so it has become my tradition.

I love doing different holiday inspired recipes for you guys to make with your friends, family and loved ones. These recipes are perfect to share with neighbors, co-workers, and to fill your Christmas Cookie Boxes. OH!! And Santa Claus too.

Representing all the Christmas flavors in my series is a high priority. I LOVEEEE the cozy flavors of Peppermint, Cinnamon, Gingerbread, Nutmeg, Peanut Butter and Chocolate, Hot Cocoa, brown sugar, marshmallow, caramel, and love to make cookies inspired by them in my series.

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.

What You’ll Need:

  • butter (I used unsalted)
  • light brown sugar
  • sugar
  • vanilla extract (or paste)
  • eggs
  • all purpose flour
  • corn starch
  • baking soda
  • salt
  • semi sweet chocolate chips
  • dark chocolate chips
  • Fisher® Pecans
  • flaky sea salt
  • parchment paper

All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

Butter Pecan Chocolate Chip Cookies

Ingredients Method

Ingredients
  

  • 1 cup butter softened 2 sticks, unsalted
  • 1 cup light brown sugar
  • 1/2 cup sugar
  • 1 tbsp vanilla extract
  • 2 eggs
  • 2 1/2 cups all purpose flour spooned and leveled
  • 1 tbsp corn starch
  • 2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup semi sweet chocolate chips + more for tops
  • 1 cup dark chocolate chips + more for tops
  • 1 cup Fisher® Pecans toasted, + more for topping
  • flaky sea salt for tops optional

Method
 

  1. Directions:
  2. Preheat your oven to 350ºF and line your baking sheets with parchment paper.
  3. In a large bowl add your softened butter, brown sugar and sugar and mix until light and fluffy.
  4. Add your eggs and vanilla extract and mix until well combined.
  5. Next, add your flour, cornstarch, baking soda, baking powder, cinnamon and salt and fold in until just combined.
  6. Toast your Fisher® Pecans in the oven at 350° F for 10 minutes. Remove from oven and let cool.
  7. Pour in your chocolate chips and toasted Fisher® Pecans— saving some for the tops. I used a mixture of semi-sweet and dark chocolate. Stir in.
  8. Scoop out your cookie dough into 1-2 inch balls and place on your baking sheets a few inches apart to prevent from spreading into each other when they bake. Top with extra chocolate chips.
  9. Chill cookie dough balls in the fridge for about 15 minutes before baking. (optional)
  10. Bake at 350ºF for 8-10 minutes and remove from oven just before cookies start to set. Using a round cookie cutter scoot in the edges of your cookies to prevent from spreading and to make them all round.
  11. Place back in oven to finish baking for 1-2 minutes. Be sure to not over bake if you like soft and chewy cookies. Cookies will still continue to bake slightly on the hot pan once removed from oven.
  12. Top with flaky sea salt (optional but this adds more flavor and helps balance the sweetness) more chocolate chips and a Toasted Fisher® Pecan and let set.
  13. Share & enjoy!!
