One of the most iconic flavor combinations during summer time is of course, S’MORES. Graham crackers, chocolate and toasted marshmallows made into a perfect summer treat. It’s fun. It’s nostalgic. It’s delicious. It’s the flavor of summer.
These Chocolate S’more cookies are one of my favorite cookie recipes I have ever made. AND that’s saying a lot because I have shared over 40 cookie recipes on this blog!!

They are soft and fluffy with the marshmallow middle, but they are also chewy and flavorful with the chocolate dough and pieces of milk and dark chocolate. The graham cracker pieces add the crunch making it the perfect bite. I also love topping my cookies off with flaky sea salt to balance the flavors.
There is something about s’mores that are so fun and nostalgic. I remember when I was growing up, in Ohio, my siblings and I would make s’mores in my backyard by the fire and we always looked forward to it. We would also walk over to my older sisters house to roast mallows with her and her family. It was our reward for helping fold clothes and clean up after my silly little nieces. I also would have them for summer events and even remember just popping them in the microwave for a less than ideal version.

These Chocolate S’mores cookies would be perfect for any summer picnic, cookout or get together. They are such a crowd pleaser and so cute and aesthetic for summer too. You could make them for family get togethers, 4th of July celebrations, birthday parties or for a weeknight sweet tooth fulfillment.
You could also make making these cookies a fun summer activity to do with your friends, kids or lover. Baking is so fun and I LOVE that this recipe is easy enough for anyone to make and I hope it could help people make some fun memories this summer.

I thought it would be so fun to do a summer recipe series where I am making different fun recipes (some healthy some sweet) that are perfect to make during the summer months. They will be quick and easy recipes anyone can make.
Some of these recipes will be no bake or frozen and perfect for those days where you don’t want to turn your oven but still need a sweet treat!! AND THEN some, like this one, will be baked because sometimes you just need a warm chocolate chip cookie no matter the temperature outside. HAHA, ya feel me?

What is Brown Butter & How Do You Make It?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it it’s delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it.
You can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.
What You’ll Need:
- unsalted butter
- brown sugar
- sugar
- eggs
- vanilla extract
- all purpose flour
- cocoa powder
- cornstarch
- baking soda
- baking powder
- salt
- chocolate chips
- Hersheys milk chocolate bars
- marshmallows
- graham crackers
- flaky sea salt
- parchment paper
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.


Chocolate S’mores Cookies
Ingredients
Method
- Preheat your oven to 350°F and line your baking sheet with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In a large bowl, add your butter and sugars, and whisk until combined.
- Add your eggs and vanilla bean paste. Whisk again until fluffy.
- Next, add your cocoa powder, flour, corn starch, baking soda, baking powder and salt. Fold until just combined.
- Scoop out your cookie dough into 1-2 inch balls, flatten it out and add one marshmallow (or 5-6 minis.) Wrap your dough around the marshmallow. (It’s ok if a little bit of the marshmallow is peaking out.) Continue with the rest of your dough and marshmallows.
- Place your cookie dough ball on your baking sheet a few inches apart ( to prevent from spreading into each other) and bake in the oven at 350°F for 8 to 10 minutes. Don’t overbake as your marshmallows could burn easily.
- Using a round cookie cutter or glass, to scoot around your cookies if they spread and to make them all round.
- Remove from oven and top with chocolate chips, Hersheys milk chocolate, and graham cracker pieces.
- Add flaky sea salt on top, share, and enjoy!!
