AHHH who doesn’t love a fun classic summer recipe, fruit pizza cookies, which are made up of a delicious sugar cookie crust with creamy cream cheese frosting and freshly cut up fruit on top, but with a FESTIVE spin?

These Fruit cookie pizzas inspired by the 4th of July are dressed up in our country’s colors, red, white and blue and are so much fun. Celebrate our country and the freedom bought by the blood of our heroes by making these American Flag Sugar Cookie Pizzas for your Independence Day get togethers.

Fruit Cookie Pizzas

4th of July is one of my absolute favorite holidays. I love to celebrate my amazing country, the United States of America, and the freedom we have by the sacrifice of so many amazing men and woman. I love that are country is based on biblical principles and family.

Fourth of July is so fun with fireworks, sparklers, food and family!! My family always loves to celebrate our country on Independence Day by spending time with each other, having a cookout and having fun. We like having, hotdogs and hamburgers, watermelon, and corn on the cob, and OF COURSE, dessert!!

This Fruit Pizza Cookie recipe is SO easy and simple to make. It’s definitely a beginner level cookie recipe but with professional results 😉 They take only a handful of simple ingredients but are oh so good. I love any recipe with fresh fruit and cream cheese frosting so these, are AMAZING.

This recipe would be perfect for the 4th of July, Memorial Day, President’s Day, Veterans Day and any day that celebrates our beautiful country. This is a great cookie recipe to make your with kids, boyfriend or girlfriend, siblings, loved ones or neighbors and co workers. HONESTLY, anyone!!

American Flag Fruit Pizza Cookies

WELCOME TO MY SUMMER RECIPE SERIES– I thought it would be so fun to do a summer recipe series where I am making different fun recipes (some healthy some sweet) that are perfect to make during the summer months. They will be quick and easy recipes anyone can make.

Some of these recipes will be no bake or frozen and perfect for those days where you don’t want to turn your oven but still need a sweet treat!! AND THEN some, like this one, will be baked because sometimes you just need a warm chocolate chip cookie no matter the temperature outside. HAHA, ya feel me?

The perfect 4th of July recipe!!

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.

What You’ll Need:

  • butter (unsalted)
  • brown sugar
  • eggs
  • vanilla bean paste or extract 
  • all purpose flour
  • baking powder
  • baking soda
  • cornstarch
  • salt
  • cream cheese
  • powdered sugar
  • heavy cream
  • blueberries
  • strawberries
  • parchment paper

All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

These cookies are a fun classic summer recipe- Fruit Pizza Cookies, which are made up of a delicious sugar cookie crust, creamy cream cheese frosting and freshly cut up fruit. This variation has a festive spin. These American Flag Fruit Cookie Pizzas are inspired by the 4th of July and are dressed up in our country's colors, red, white and blue. They're so fun and festive and perfect for Independence Day!!

Ingredients Method

Ingredients
  

For Sugar Cookies:
  • 1 cup butter 2 sticks, unsalted, softened
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla bean paste or extract
  • 2 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp cornstarch
  • 3/4 tsp salt
  • 1/4 cup sugar for rolling
Cream Cheese Frosting:
  • 8 oz block of cream cheese
  • 1/2 cup butter one stick, softened
  • 5-6 cups powdered sugar
  • 1 tsp vanilla bean paste or extract
  • 1/4 cup cold heavy cream
  • blueberries
  • strawberries

Method
 

For Sugar Cookies:
  1. Line a baking sheet with parchment paper and pre heat your oven to 350° F.
  2. In a large bowl, add your softened butter, sugar and brown sugar and stir until well combined.
  3. Add your eggs and vanilla bean paste (or extract) and stir again.
  4. Then, add your flour, baking powder, baking soda,corn starch and salt and fold until dough forms.
  5. Using a cookie scoop, scoop out your cookie dough and roll it in some sugar and place on baking sheet lined with parchment paper.
  6. Bake in the oven at 350° F for 8-10 minutes until edges start to turn golden brown. Remove from oven and let cool.
For Cream Cheese frosting:
  1. In a large bowl of a mixer, add your butter and cream cheese and beat until blended together and starts to get light and fluffy. About 5 minutes.
  2. Add your vanilla and salt and slowly add your powdered sugar, mixing after each addition.
  3. Last, add your heavy whipping cream and beat it in until combined.
Assembling your Cookies:
  1. Once your cookies have cooled, take some of your cream cheese frosting and add a swirl of frosting onto each cookie using an offset spatula.
  2. Cut your blueberries in half and your dice your strawberries.
  3. Add your fruit onto the cookie in a pattern that resembles an American flag.
  4. Continue with the rest of your cookies and then share and enjoy!!
