Craving chocolate chip cookies but want to spice them up a bit? If so, these “triple” chip cookies are FOR YOU!!! But here is the catch… the name triple chip cookies is a bit faulty because these actually have 5 (and I mean FIVE) different kinds of chocolate chips. This recipe has dark chocolate chips, milk chocolate chips, butterscotch chips, white chocolate chips and mini chocolate chips.

Do you have to use all of these chips? No, you can add whatever kinds of chocolate chips you’d like! Honestly, it doesn’t even have to stop there. You could add chocolate chunks, peanut butter chips too or whichever ones you’d like best!
What gives these cookies a chewy texture? Well, two things… brown sugar and OATS. This recipe has more brown sugar than white sugar. Since brown sugar tends to give more of a chewy texture, rather than regular granulated sugar which gives more of a crisp, I like to add more brown sugar than white sugar in my cookies to balance out the texture. BOTH serve a very important role in cookie making.

- cornstarch
- baking soda

- dark chocolate chips
- milk chocolate chips
- white chocolate chips
- butterscotch chips
- mini chocolate chips
- flaky sea salt
What is Brown Butter?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it its delicious deep nutty flavor. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back. It’s super simple to make so the extra step is optional but 100% worth it.
When I was younger I used to bake a lot of recipes in this cook book we had. When I was first learning to bake, that cook book definitely was my go to. I remember finding a few in there that I went back to (and honestly still do) which helped me grow as a baker. One time a remember my mom making cookies with lots of different kinds of chips in them and how she made them in a HUGE batch. I was so infatuated how they kept coming and never stopping. These cookies kind of remind me of that.
Triple Chip Cookies
Ingredients
- 1 cup butter (two sticks, browned)
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 2 3/4 cup flour
- 1/2 cup oats
- 2 tbsp cornstarch
- 1 tbsp baking soda
- 1 tsp salt
- 1/2 cup dark chocolate chips
- 1/2 cup butterscotch chips
- 1/2 cup white chocolate chips
- 1/2 cup mini chocolate chips
- flaky sea salt (optional)
Instructions
- Pre-heat your oven to 350 degrees and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it's melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In large bowl add your butter and sugars and mix until combined. Add your eggs and vanilla extract and whisk until light and fluffy and almost foamy.
- Next, add your flour, oats, cornstarch, baking soda and salt and stir until almost fully combined. Add your 5 kinds of chips and fold until fully incorporated.
- Scoop your cookie dough into 1-2 inch balls and place onto your baking sheets lined with parchment paper. Top with extra chips. Bake at 350 degrees for 8-10 minutes and until they turn slight golden brown.
- Remove from oven and top with flaky sea salt. Let cool for a couple minutes before serving. Share & enjoy!!
