Thin Mint Milkshake

Growing up, every year we would get so excited when St.Patrick’s Day would come around. My family loves to go all out when celebrating holidays and even thought St.Patrick’s day is not as a big of deal as some other bigger holidays I remember we would always do something special and make it a fun family day.

My family would always go out and eat at a restaurant and dress up in silly green hats. It was so fun. We often ate at a place called Johnny Bascellis and it became a tradition for a few years.

One thing we would always get excited for were the “shamrock shakes” at Mcdonalds that would come around at this time of year. Before I moved to Florida, we would always visit in February each year and we’d get the mint shakes on vacation or as soon as we got back home and that was such a fun memory.

Thin Mint Milkshake for St.Patricks Day

This Thin Mint Milkshake is inspired by those fun memories as well as the beloved (one of my fav) girl scout cookies. It has a thin mint shake base, whipped cream (I used Truwhip whipped topping) as well as chocolate ganache to smother on the cup.

This shake is so easy to make but so fun and festive and the perfect St.Patrick’s Day dessert. It makes two shakes but you could totally double the recipe for more servings or put them in smaller cups to share. Kids and adults alike would love this shake so adjust it to whatever you like best.

What you’ll need:

  • milk
  • vanilla ice cream
  • thin mints (or some type of chocolate mint cookies)
  • green food coloring (optional)
  • whipped cream
  • chocolate chips
  • heavy cream

Milkshakes are such a fun and easy dessert. They take almost no time to make yet are so yum and versatile. I love this mint milkshake because of all the components like the whipped cream, chocolate ganache and mint cookies as well as the base. You can also customize it to your liking and leave out what you don’t love. If you like mint chocolate chip ice cream or thin mints, then you’ll love this shake.

Thin Mint Milkshake

The perfect mint milkshake for St.Patricks day or anytime. Thin mint shake, whipped cream on top and bottom and drizzled with chocolate ganache this shake is so tasty and festive.

Ingredients
  

For Thin Mint Shake:

  • 5 scoops vanilla ice cream
  • 1 cup milk
  • 6-8 thin mint cookies
  • 3-5 drops green food coloring

For Chocolate Ganache:

  • 1/4 cup heavy cream
  • 1/2 cup chocolate chips or baking chocolate

Toppings:

  • whipped cream (I used Truwhip whipped topping)
  • thin mints

Instructions
 

For Milkshake:

  • In the cup of your blender, scoop your ice cream, add your food coloring, 6 thin mints and your milk and blend until smooth.

For Chocolate Ganache:

  • In a glass measuring cup add your heavy cream and heat in the microwave for about 45 seconds to 1 minute and add your chocolate in. Let chocolate set in the hot heavy cream until it starts to melt and stir it up until well combined.

Assemble:

  • Grab two tall glasses and spread some of your chocolate ganache on the rim.
  • In the glasses add a spoonful of your whipped cream. (I used Truwhip whipped topping)
  • Pour in your shake until both of your cups are full.
  • Top with more whipped cream, drizzle with chocolate ganache and top with crushed thin mints and one full one as a cute garish.
  • Share your extra shake with a loved one and enjoy!!

Notes

Do I have to add food coloring?
Of course not!! The green food coloring is just to make it green in celebration of St.Patrick’s day. If the color doesn’t matter to you, you can totally leave it out.
I can’t find girl scout thin mints!? How can I still make this?
You can absolutely use the true authentic Thin Mint Girl Scout cookies but it definitely don’t have to. I have found thin mint style cookies at Aldi and Walmart (& I’m sure some other stores) that work perfect for this.
