It’s day 9 of my 12 days of Christmas cookie series!! I absolutely love baking Christmas Cookies so this series is my absolute favorite. Last year was my first time doing this series and I’m so happy to be doing it again this year!! It’s SO fun!!

So far this year I have done, Oatmeal Chocolate Chip Cookies, Peanut Butter Chocolate Marbled Cookies, Cranberry Orange Muffin Top Cookies, White Chocolate Coconut Macadamia Nut Cookies, Marbled Christmas Sugar Cookies, Salted Caramel Cookies, Chocolate Crinkle Cookies & Cinnamon Roll Cookies!! They are all so yum!! This Christmas Cookie series is one of my favorite things to share.
What You’ll Need:
- butter
- sugar
- brown sugar
- vanilla extract
- lemon zest
- lime zest
- lemon juice
- lime juice
- eggs
- flour
- cornstarch
- baking soda
- salt
- cranberry
- water
- lemon juice
- Sprite Cranberry
- powdered sugar
All the ingredients for these cookies are so simple but make big results!! I like to share a list of everything you’ll need for these cookies before all the recipe details so that way you know everything you’ll need and what you may need to get before you start making the recipe. All these ingredients and tools can easily be found whether that’s in your pantry already or in your nearby grocery store.
How did these cookies come about you ask? Well, leading up to my cookie series, I was asking my friends if they had any ideas of cookies I should include in the series. One of my brother and I’s friend said “Sprite Cranberry Cookies” so that’s where the idea was born.
If you are looking for a unique cookie flavor, than this is for you. These cookies are a burst of citrus with the lemon and lime. They are soft and smooth and have an extra tart bite with the cranberries. The Sprite Cranberry Glaze sets these cookies to the next level and adds the extra fizzy bite.
Let’s Get Started:
Sprite Cranberry Cookies
Ingredients
For Cookies:
- 1 cup butter 2 sticks softened, unsalted
- 1 cup sugar
- 1/4 cup brown sugar
- 1 tbsp vanilla extract
- 1 tbsp lemon zest
- 1 tsp lime zest
- 2 tbsp lemon juice
- 1 tbsp lime juice
- 1 egg + 1 eggs yolk
- 2 1/2 cups flour
- 1 tbsp cornstarch
- 1 1/2 tsp baking soda
- 1/2 tsp salt
For Cranberry Swirl:
- 1 cup cranberry
- 1 cup water
- 1/2 cup sugar
- 1 tbsp lemon juice
For Sprite Glaze:
- 2 tbsp Sprite Cranberry
- 1 cup powdered sugar
Instructions
For Cookies:
- Preheat oven to 350℉ and line your baking sheets with parchment paper.
- Zest and juice 2 lemons and 2 limes.
- In a large bowl, add your sugar, brown sugar, lemon zest and lime zest and message together to release flavors from zest. Add butter and mix until well combined.
- Add your eggs, vanilla extract, and stir until light and fluffy.
- Once your wet ingredients are combined, add your flour, cornstarch, baking soda and salt and fold together until just combined.
- Scoop your cookie dough into 1-2 inch balls and place them on your baking sheets lined with parchment paper.
For Cranberry Swirl:
- In a sauce pan over medium high heat, add your cranberries, water, sugar and lemon juice and bring to a boil.
- Using a whisk or masher, mush your cranberries. Once your mixture cooks for 2-4 minutes and starts to thicken. Turn heat to low and let cook for 3 more minutes. Remove from heat and let cool.
- Once your cranberry sauce has cooled, spoon dollops into your cookie dough and swirl it in.
- Scoop your cookie dough into 1-2 inch balls and place them on your baking sheets lined with parchment paper.
- Bake in a 350℉ oven for 10-12 minutes. Remove from oven and use a round cookie cutter to scoot in the edges of your cookies to make them all round. Let cool.
For Glaze:
- In a small bowl mix your powdered sugar and Sprite Cranberry until it's smooth. If your glaze is too thin, add a tablespoon more of powdered sugar, if it's too thick add a teaspoon more Sprite.
- Once your cookies have cooled down a little bit, drizzle your glaze over your cookies.
- Share & enjoy!!
