These no bake cheesecake bars are smooth and creamy and SUPER easy to make. Anyone can make these!! Pumpkin swirl No-Bake Cookie Butter Cheesecake Bars are going to be a hit at your thanksgiving day meal.
I love making no bake cheesecake because you then don’t have to worry about any eggs or cracking cheesecakes or water baths or anything like that. Although I love normal baked cheesecake, no bake cheesecake bars are less hassle.
Baking for Thanksgiving and Christmas is my absolute favorite. I love baking around the holidays because it’s just so eventful and special. Everyone gathers, and shares and offers their best. It’s also SO nostalgic because I love doing our traditions every year. Watching the Macy’s Thanksgiving Day Parade, making a Turkey and of course my new tradition, snagging all those online deals just in time for Christmas.
Last year I did a Pecan Pie No-Bake Cheesecake Bars recipe and it went viral on tiktok and instagram. They were such a big hit and it was SO COOL to see all of you guys tag me in your pictures and hearing your reviews. They are definitely one of my and my familys favorite recipes I’ve made.
After that, I decided to do a “no-bake cheesecake bar series” and this is a part of it. So far I have done No-Bake Strawberry Cheesecake Bars, No-Bake Mango Cheesecake Bars, Apple Crisp No-Bake Cheesecake Bars, and of course the viral Pecan Pie No-Bake Cheesecake Bars!! So excited to continue this series and make more easy no-bake cheesecake bars for all to make and enjoy!!
What you’ll need:
- graham crackers (or biscoff cookies)
- butter
- brown sugar
- salt
- vanilla extract
- cream cheese
- Truwhip (tub whipped topping) or heavy whipping cream and powdered sugar
- pumpkin puree
- cookie butter
- parchment paper
All these ingredients are easy to find, whether that’s in your pantry already or at your local grocery store. They are SIMPLE ingredients but BIG flavor. I love putting a list together of what you’ll need ahead of the recipe so that way you can see what you have and what you may need to grab at the store to make this recipe.

Pumpkin Swirl No-Bake Cookie Butter Cheesecake Bars
Ingredients
For Crust:
- 1 package graham crackers 9 crackers, crushed
- 6 tbsp butter melted
- 1/2 cup brown sugar
For Cheesecake:
- 16 oz cream cheese 2 blocks
- 1/2 brown sugar
- 1 16 oz tub or Original Truwhip or 1/2 cup or cold heavy whipping cream and 1/4 cup powdered sugar whipped until stiff
- pinch of salt
- 1 tsp vanilla extract
- 1/2 cup pumpkin puree
- 1/2 cup cookie butter
Instructions
For Crust:
- In a medium sized bowl, add your crushed graham crackers, melted butter and brown sugar and stir until combined and stays together when patted down with the back of your spoon.
- Line a 9 by 13 inch baking dish with parchment paper.
- Transfer your crust into the dish and press down. Chill in freezer while you make your cheesecake mixture.
For Cheesecake:
- In a large bowl add your cream cheese, brown sugar, salt, and vanilla. Use a hand mixer to blend it together until it's well combined.
- Add your Original Truwhip (or 1/2 cup of cold heavy whipping cream and 1/4 cup of powdered sugar blended until stiff) and fold into your cream cheese mixture.
- Split in half and add your pumpkin puree to half. Remove crust from freezer and go back and forth adding your mixture into the crust.
- Spread out evenly and place back into freezer until set.
- Remove from freezer, cut into bars and drizzle with cookie butter.
- Share and enjoy!!
