This Pumpkin Cinnamon Streusel Cake is soft and fluffy and super moist. Flavors of Pumpkin and Cinnamon make this such a warm and cozy holiday recipe. The Streusel filling and topping add the perfect texture and flavor and the simple glaze top it off perfectly making this recipe so pretty and festive.

It’s the perfect recipe to make for fall and winter and the holiday season. It is super easy to make and would be so perfect for Thanksgiving or Christmas. It’s so easy to whip up and snack on but delicious enough to share with those you love.

Baking season is one of my favorite things ever not just because I love to bake but also because it inspires soooo many others to bake. It’s like it sparks a passion of baking in so many. I love this recipe because it’s SOOO tasty but truly easy enough for any level baker.

Thanksgiving is one of my most favorite times of the year!! Love how baking and cooking delicious food on thanksgiving brings people together and creates such a special atmosphere of gratitude and positivity.

What should I make this Recipe for?

This recipe would be perfect for thanksgiving and is such a crowd pleaser. You could also make this recipe the day ahead and add the glaze the same day to save on oven space. I ate mine the day after I baked it and it was marvelous.

You could make this cake for a delicious breakfast because it totally gives coffee cake vibes. You could also make it for a birthday or family get together. An event at school or work or even for your small group at church. Honestly this would be so good for anything.

It’s so good, thick but still fluffy and moist but not crumbly. So it’s easy to serve because it stays in tact really well. My family loved it and my boyfriend and I also took some to my neighbors and they seemed to enjoy it so much.

This recipe has all the warm and cozy flavors of fall. There’s just something about baking with pumpkin and cinnamon that is so comforting. The pumpkin flavor isn’t too string or overpowering but just the right amount.

To make this recipe, first make a simple cake batter with pumpkin puree that is patted dry (so no extra moisture). Then you, of course make the streusel which is just a handful of ingredients. In a 9 by 9 inch baking dish lined with parchment paper, add half of your pumpkin cinnamon cake batter, then sprinkle in half your streusel mixture. Pour remaining cake batter on top and sprinkle the top with the rest of your streusel.

Bake it in the oven for 35-45 minutes until a butter knife comes out clean. If it’s still raw in the middle keep it in the oven for 5 minutes at a time checking until it’s done. Add a pice of foil or parchment on top if the top of the cake is browning too much. It will be worth it to make sure its baked all the way through because no body wants a gooey cake.

Of course once your cake has cooled, you drizzle it with a beautiful and simple glaze made with milk and powdered sugar. You could even sprinkle some cinnamon on top. Then cut into squares and enjoy!!

They are not only beautiful but they’re so so tasty and would be perfect paired with some coffee or tea. I cannot wait for you guys to try out this pumpkin cinnamon streusel coffee cake.

What You’ll Need:

  • sugar
  • vanilla extract
  • oil
  • sour cream
  • pumpkin puree
  • eggs
  • all purpose flour
  • cornstarch
  • baking soda
  • baking powder
  • salt
  • whole milk
  • cinnamon
  • butter
  • oats
  • brown sugar
  • powdered sugar
  • parchment paper

All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

Ingredients Method

Ingredients
  

For Cake:
  • 1 1/4 cup sugar
  • 1 tbsp vanilla extract
  • 1/2 cup oil
  • 3/4 cup sour cream
  • 1/2 cup Pumpkin puree patted dry
  • 3 eggs
  • 2 1/2 cups flour
  • 2 tbsp cornstarch
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 1/2 cup of milk
For Streusel:
  • dash of cinnamon
  • 1/2 cup butter one stick, cold, cubed
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup flour
For Glaze:
  • 2 cups powdered sugar
  • ¼ cup milk

Method
 

  1. In a large bowl, add your sugar, oil, vanilla extract and sour cream and whisk until well combined.
  2. Using a clean dish cloth or a paper towel, soak the moisture out of your pumpkin puree, patting it dry. Add your pumpkin puree to the mixture and stir again.
  3. Add your eggs one at a time, mixing in between each addition.
  4. In a medium bowl, stir together your dry ingredients, including your cinnamon, flour, cornstarch, baking soda, baking powder and salt.
  5. Add ⅓ of your dry ingredients into your mixture and mix until just combined. Add half your milk.
  6. Add an additional ⅓ of the dry Ingredients and mix and you second half of milk and mix.
  7. Lastly, add you last ⅓ of dry ingredients and mix until just combined, being careful to not over mix.
  8. Preheat your oven to 350°F
  9. For the streusel, add your cold butter, oats, brown sugar, cinnamon and flour and use a fork, your hands or a pastry cutter to blend until it starts to come together. It’s ok if it’s still a little crumbly.
  10. Add parchment paper to your 9 by 9 square baking dish and pour in half your batter. Take half your crumble mixture and crumble it on top of the batter.
  11. Add the rest of the batter on top.
  12. Crumble the rest of your crumble on top of your cake and bake in the oven at 350° for 40-45 minutes until a knife comes out clean. (If at 45 minutes, your cake is still sticky and wet, keep it in the oven for 5 minutes at a time checking until it’s done)
  13. To make the glaze, add your powdered sugar and milk and whisk until smooth.
  14. Once your cake has cooled, cut them into slices 4 by 4 and drizzle your glaze over the top.
  15. Share and enjoy!!
