Every year I do a cookie series called my 12 days of Christmas Cookie Series where I create 12 different cookie recipes you can make for Christmas. It’s such a fun way to celebrate the season and get into the spirit of Christmas. AND who doesn’t love cookies?


I absolutely love seeing you guys tag me in your cookie posts every year and share that you made them for your loved ones. Cookies is something that is so fun and easy and versatile but helps bring people together and makes life more festive. Thank you again for being here, I hope you feel so welcome and find cookie recipes to make for generations to come.
Christmas is such a special time of year for giving and peace and being a blessing to those around you. Although those are things we should practice and pursue all year round, Christmas brings that light and inspiring spark to make it a greater effort. Even something as simple as baking cookies, can go so far and mean so much to people.

These Pumpkin Cinnamon Roll Cookies are the perfect thanksgiving dessert recipe. They’re quick to make and can be made ahead of time to save on oven space. Plus they are so festive and on theme but still something different and fun. If you are a fan of snickerdoodle, pumpkin and cinnamon rolls, than these cookies are for you!!
They’re so soft and super simple to make as well. They take the qualities of a soft and chewy snickerdoodle, add the fall flavors of pumpkin and cinnamon and add a cinnamon swirl just like a cinnamon roll and OF COURSE top them off with a cream cheese glaze. (or if you aren’t a fan of cream cheese, you can make a simple glaze without the cream cheese.)


What should I make these for?
These cookies are PERFECT for the holiday season. The flavors are festive and are sure to please a crowd. You could make these cookies for Thanksgiving, Christmas, or anytime throughout the season. They would be a wonderful recipe for a holiday family get together.
You could make them with your kids or your best friend or lover as a fun festive activity!! OR you could even make them for your neighbors, essential workers in your community, church family or school teachers. Cookies always make such a kind gift, that’s personal and affordable and what better time, than the holidays?

What is Brown Butter & How Do You Make It?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it it’s delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it.
You can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.
Be careful not to walk away as it could burn or overflow when it foams. I have a quick video on how to make brown butter- HERE!! It takes just a few minutes to make but this video is a visual way to see if that helps you out!!


I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.
What You’ll Need:
- butter
- brown sugar
- sugar
- eggs
- vanilla bean paste or extract
- pumpkin puree
- flour (all purpose)
- cornstarch
- baking soda
- baking powder
- salt
- cinnamon
- cream cheese
- milk
- powdered sugar
- parchment paper
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

To get my cookies to be super round and all the same shape, I like using a round glass, a biscuit cutter or cookie cutter to the lid of a mason jar!! It’s definitely not required but just a fun little tip, I like to use. I’ll share a link HERE to some on amazon if you’d like to try out this simple yet effective baking hack. (affiliate code)

LET’S GET STARTED!!

Pumpkin Cinnamon Roll Cookies
Ingredients
Method
- Preheat oven to 350℉ and line your baking sheets with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted, keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns a amber brown color. Transfer into a glass measuring cup and let cool.
- In a large bowl, add your cooled browned butter, brown sugar, and sugar and stir until well combined. Add your eggs, vanilla extract or paste and stir until light and fluffy.
- Using a clean dish cloth or paper towels, pat your pumpkin puree dry so it’s not wet. Whisk it into your mixture.
- Once your wet ingredients are combined, add your flour, cinnamon, cornstarch, baking soda, baking powder and salt and fold together until just combined.
- Scoop your cookie dough into 1-2 inch balls and place them on your baking sheets lined with parchment paper. Slightly press down with the palm of your hand. Now make the cinnamon swirl-
- In a small bowl add your additional softened butter, cinnamon, and brown sugar and mix until comes together.
- Transfer your mixture into a small baggie and cut a super small hole on one corner.
- Pipe a swirl of your cinnamon roll mixture onto each cookie dough ball and bake in the oven for 350℉ for 8-10 minutes.
- Remove from oven, use a round cookie cutter to scoot around your cookies and make them round, let cool.
- In a small bowl mix your powdered sugar, cream cheese (optional) and milk, until it’s smooth. If your glaze is too thin, add a tablespoon more of powdered sugar, if it’s too thick add a teaspoon more of milk.
- Once your cookies have cooled down a little bit, drizzle your glaze over your cookies.
