Another day, another cookie. Welcome to my 12 days of Christmas cookie series. The past couple of years I have done a video series where I create 12 different Christmas cookie recipes for the holiday season for you guys to make for your friends and family and of course, Santa too.
A couple years ago I did a Hot Cocoa Cookies recipe as a part of my series and it went viral!! You guys seemed to love it so much so I decided to do another variation of the cookie with an even MORE Christmasy take on it.
These Peppermint Hot Cocoa Cookies are SO fun and festive to make. They are soft, chewy and stuffed with a whole marshmallow. SO GOOD. They are chocolatey and pepperminty and marshmallowy. I’m not sure if any of those are even real adjectives but these cookies are so good, it doesn’t matter. HAHA
These are double Chocolate Cookies stuffed with a marshmallow and topped with peppermint candy pieces that add the perfect crunch.

These recipes are great to make for Christmas cookie swaps, holiday parties, family get togethers, office Christmas parties, with your boyfriend, girlfriend, best friends or loved ones or just to make on a cold winter evening to enjoy while watching your favorite Christmas movies. You can even make them with your kids and they would love it!!
What is Brown Butter & How Do You Make It?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it it’s delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it.
You can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.
What You’ll Need:
- butter
- brown sugar
- sugar
- eggs
- vanilla extract
- peppermint extract
- flour
- cocoa powder
- cornstarch
- baking soda
- baking powder
- salt
- chocolate chips
- peppermint candy
- 10 oz bag of marshmallows
- parchment paper
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.
Let’s get started!!
Peppermint Hot Cocoa Cookies
Ingredients
- 1 cup butter browned
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1 tsp peppermint extract
- 2 1/2 cups flour
- 1/3 cup cocoa powder
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3/4 tsp salt
- 1 cup chocolate chips
- 1/2 cup crushed peppermint candy
- 1 10 oz bag of marshmallows
Instructions
- Preheat your oven to 350°F and line your baking sheet with parchment paper.
- In a sauce pan over medium high heat, add your butter and let melt. Once it’s melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.
- In a large bowl, add your butter and sugars, and whisk until combined.
- Add your eggs, vanilla extract and peppermint extract. Whisk again until fluffy.
- Next, add your cocoa powder, flour, corn starch, baking soda, and salt. Fold until just combined.
- Add your chocolate chips and peppermint candy pieces.
- Scoop out your cookie dough into 1-2 inch balls, flatten it out and add one marshmallow. Wrap your dough around the marshmallow. (It’s ok if a little bit of the marshmallow is peaking out.) Continue with the rest of your dough and marshmallows.
- Place your cookie dough ball on your baking sheet a few inches apart and bake in the oven at 350°F for 8 to 10 minutes. Don’t overbake as your marshmallows could burn easily.
- Using a round cookie cutter or glass, to scoot around your cookies if they spread and to make them all round.
- Remove from oven, top with flaky sea salt, let set, share, and enjoy!!

DELICIOUS recipe. definitely make!!! the flavours in this from the brown butter, peppermint and chocolate work together so well. i did 48g dough balls (including marshmallow) and i think this is a perfect size! also, putting a marshmallow with the top peaking out makes them perfectly browned and slightly crisp like a smore!!! these cookies are soo soft and chewy, but a little oily on the bottom and a bit too soft that it can break when it is picked up, even after cooling. (not sure why this is a problem though?) overall, def make this recipe!

During the last years I’ve made your hot coca cookies and they were a real hit! This year I wanted to try out a new recipe, I chose this. I like it but I do tho prefer the hot coca ones.
