This recipe went viral on TikTok 2 years ago and it’s been well loved ever since. These cheesecake bars are honestly so good and super easy to make and it’s been SO fun seeing your photos of you making them!!
I’m not even kidding at the fact that when I tried these no- bake cheesecakes bars covered in an ooey gooey pecan topping, it was love at first bite. The thing is, it was probably so enjoyable to me because not only the flavors, but how easy they were to make. There was literally no oven involved so it makes these the perfect dessert for holiday get togethers because it doesn’t take up oven space. (Gotta save that for the turkey, wink wink.)

These pecan pie no-bake cheesecake bars consist of three layers. Don’t worry, they all are so easy to put together. The first layer is a simple graham cracker crust and is the perfect bite for these bars. The crust is what holds these all together. The second layer is the cheesecake layer. It consists of cream cheese, whipped cream and a few other simple ingredients. The last layer is the pecan pie filling to spread all over the top. It’s gooey and caramally and oh so perfect.
What you’ll need:
- cream cheese
- butter
- brown sugar
- whipped cream
- graham crackers
- salt
- vanilla extract
- cinnamon
- pecans

I’m a big fan of cheesecake, though it’s something that I procrastinated to make. It was on my list for the longest time until I started making some no-bake cheesecake desserts. My mom on the other hand has made some amazing cheesecakes for my family that we absolutely devoured.
These are the absolute best dessert to make for thanksgiving because they are super easy and quick to make, take no oven time or space and they are a chilled dessert which is perfect to go along with the warm thanksgiving food. Plus the flavor is great for the holidays. I don’t know about you but combining pecan pie and cheesecake is like heaven in your mouth.

Pecan Pie No-Bake Cheesecake Bars
Ingredients
Graham Cracker Crust:
- 2 cups crushed graham crackers (about 12 full crackers)
- 1/2 cup brown sugar
- 6 tbsp melted butter
Cheesecake Mixture:
- 16 ounces cream cheese (2 packages)
- 1/2 cup brown sugar
- 10 oz whipped cream (homemade, about two cups, or one tub)
- 1 tsp vanilla extract
Pecan Topping:
- 2 cups pecans
- 1/4 cup butter (half a stick)
- 1/3 cup heavy cream
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 tbsp cinnamon
- pinch of salt
Instructions
Crust:
- In a bowl, add your graham cracker crumbs, brown sugar, and melted butter. Stir until everything comes together.
- In a 9 by 13 inch baking dish lined with parchment paper, add your mixture and press down with a glass until its packed down. Let chill while you make your cheesecake mixture. (About 15 minutes)
Cheesecake Mixture:
- In a large bowl, add your cream cheese, brown sugar and vanilla extract. Whip it up until its well combined and smooth in texture.
- Next add your whipped cream and fold until combined. You can use a 10 oz tub of whipped cream (I used Truwhip) or you can make homemade whipped cream with heavy cream, vanilla and powdered sugar.
Pecan Topping:
- In a sauce pan over medium heat add your butter and brown sugar and let melt. Stir until they are fully combined and let mixture cook until it bubbles. Once it starts to bubble continue stirring and cooking for about two more minutes.
- Remove from heat and add your cinnamon, salt, vanilla extract and heavy cream and stir until it comes together.
- Next, add your pecans and stir them into your mixture until they are all coated.
Assemble:
- To assemble your cheesecake bars, add your cheesecake mixture to the crust and spread out evenly. Let chill for 30 minutes in the freezer.
- Next, add your pecan topping and spread all over the bars. Let chill for another 30 minutes. Remove from freezer and cut into bars. Enjoy!!

Hi these look amazing and thinking of making for Thanksgiving here is my question do you serve frozen or do you freeze it initially and then put in the refrigerator if so how long does it last and when would I remove from the freezer If serving or is it supposed to be a frozen dessert I hope you understand thank you for sharing
Hey there. I am so happy to hear you are making these for thanksgiving. In the directions I say to chill them in the freezer because it speeds up the process a lot. You can definitely store them in the freezer if you would like for up to a week or two if covered but you can also serve them chilled from the fridge for up to a few days as well. I ate them from the freezer and they were good but also when they were sat out for a bit as well. Both ways are great. If you do store them in the freezer and then serve you could prob let them set out for around 20 minutes for them to soften up like normal cheesecake texture. I’ve made these multiple times and everyone loves them. I just was curious do you let the cream cheese get to room temp before you do the recipe or do you use it cold? I’m making it again this evening and was curious as to your method.

Love this recipe made it for Thanksgiving, but it took me 3 tries to make the topping come out correctly. Am I overcooking…..I have watched your video a million times and it looks so simple. Tonight my topping got little chunks of caramelized sugar in it and they would not smooth out…please help…my family definitely gave this recipe ⭐️⭐️⭐️⭐️⭐️
Hey there, I think I may have answered you on tiktok but will answer here as well if anyone else has this problem. Basically when making the topping its a lot like making caramel which can crystalize if not make correctly. Basically you want to make sure that you add the heavy cream and vanilla extract AFTER removing from the heat. If you do it while it’s on the heat it will cook off causing your caramel to caramelize. So glad you guys loved them in the end 🙂

I made these for my hubbies birthday. Easy and DELICIOUS! I chopped my pecans. Pretty seeet so we did bite sized pieces. They were a hit with everyone and my nephew asked me to please make for thanksgiving. I keep mine in the freezer and serve straight from there. We liked them firmer, but as they softened up they were good too. They kept really well in a container in the freezer! So easy to make!

If I wanted to make these but a no bake pumpkin cheesecake flavor, would I just add puree instead of the whipped cream?

I made this on Christmas and new years and it so delicious it was all gone no less then 10 minutes every one loved it. Oh how the pecans in the cheese cake gave it that extra crunch and the syrup that the pecans are in really put that cherry on top of cake lol over all one of the best cheesecake I have ever ate !!

They are perfectly balanced and SO, SO DELICIOUS. Also a plus that they’re so easy! Don’t know that we’ll ever go a year without them now!
