It’s day 11 of my 12 days of Christmas Cookies Series!! I am so excited to continue my cookie series I started last year and do it again this year!! It is so much fun to bake all sorts of Christmas Cookies for you!!

Pecan Butterscotch Dark Chocolate Chip Cookies

So far this year I have done, Oatmeal Chocolate Chip Cookies, Peanut Butter Chocolate Marbled Cookies, Cranberry Orange Muffin Top Cookies, White Chocolate Coconut Macadamia Nut Cookies, Marbled Christmas Sugar Cookies, Salted Caramel Cookies, Chocolate Crinkle Cookies & Cinnamon Roll Cookies!! They are all so yum!! This Christmas Cookie series is one of my favorite things to share.

Baking around Christmas time is one of my absolute favorite times to bake. There is just something so special about baking for your family and friends and for the people you love. I love it!! Baking around Christmas is so nostalgic and fun.

If you’re looking for some recipes to make for christmas, a holiday party, your co-workers, for a family gathering, your neighbors, or even a cookie swap or cookie box, I’d love for you to try out any of my cookie recipes. They are all so yum and most stay soft or can be chilled for a week to even a month depending on the recipe.

I love seeing you guys make my recipes and tag me in your videos and photos. It’s so fun and makes me so happy to see you make and enjoy and share my recipes.

What is Brown Butter & How Do You Make It?

Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it it’s delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it.

You can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.

Toasting your Pecans

Any time you bake or make a recipe with nuts, it’s so important to toast them. Toasting your nuts brings out the flavor of the nuts and also adds a super nice crunch to them that may have not been there otherwise. Although it is an extra step (unless you buy toasted nuts) it definitely is worth it if you want your cookies to be next level good.

What you’ll need:

  • butter (unsalted)
  • brown sugar
  • sugar
  • vanilla extract
  • vanilla bean paste
  • eggs
  • flour (all purpose)
  • oats
  • cornstarch
  • baking soda
  • salt
  • dark chocolate chunks
  • butterscotch chips
  • pecans
  • flaky sea salt

All the ingredients for these cookies are so simple but make big results!! I like to share a list of everything you’ll need for these cookies before all the recipe details so that way you know everything you’ll need and what you may need to get before you start making the recipe. All these ingredients and tools can easily be found whether that’s in your pantry already or in your nearby grocery store.

Pecan Butterscotch Dark Chocolate Chunk Cookies

These Pecan Butterscotch Dark Chocolate Chunk Cookies are soft, chewy, and flavorful. Soft brown butter cookie dough base with butterscotch chips, dark chocolate chunks and toasted pecans. They are the perfect indulgence for a late night sweet.

Ingredients
  

  • 1 cup butter 2 sticks, unsalted butter, browned
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp vanilla bean paste
  • 2 eggs
  • 2 1/4 cups flour all purpose, spooned & leveled
  • 1/2 cup oats
  • 1 tbsp cornstarch
  • 2 tsp baking soda
  • 3/4 tsp salt
  • 1 cup dark chocolate chunks
  • 1 cup butterscotch chips
  • 1 1/2 cups pecans chopped, toasted
  • flaky sea salt

Instructions
 

  • Preheat your oven to 350° F and line your baking sheets with parchment paper.
  • In a sauce pan over medium high heat, add your butter and let melt. Once it's melted, keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns an amber brown color. Transfer into a glass measuring cup and let cool.
  • Add your pecans in a small baking dish and toast in your oven for 8-10 minutes.
  • In a large bowl, add your cooled brown butter, brown sugar and sugar and mix until well combined.
  • Add your eggs, vanilla bean paste, and vanilla extract and mix until light and fluffy.
  • Add in your flour, cornstarch, baking soda, and salt. Stir until almost combined.
  • Pour your butterscotch chips, dark chocolate chunks, and toasted pecans (reserving a few for the tops of the cookies) and fold until just combined.
  • Scoop your cookie dough into 1-2 inch balls and place on your baking sheets lined with parchment paper and few inches from each other. (To prevent them from spreading together)
  • Bake at 350° for 8-10 minutes until edges start to set. Remove from oven.
  • Using a round cookie cutter or glass, scoot the edges of your cookies to make them round.
  • Top with additional butterscotch chips, dark chocolate chunks and toasted pecans. Let cool.
  • Share and enjoy!!
