Peach Galette

If you are looking for the PERFECT end of summer beginning of fall recipe, this ones for you!! Peaches are one of my favorite fruits to bake with and this peach galette is so delicious and is so decadent yet very easy to make!!

It’s flavorful, soft yet has a good bite and has summery dessert vibes. PLUS, this recipe is paired perfectly with vanilla ice cream or homemade whipped cream.

Summer time is such a blast. Who doesn’t love making fun memories in the sunshine that fuel you for the rest of the year. AND what makes every memory even better? DESSERT!! Dessert is something that brings people together and I love that so much.

I love making dessert recipes for every season and event so that you guys can make them for the people you love. Quick and easy recipes, that you can make for parties or weekend hangouts are my kinda recipes!!

Delicious Peach Galette Recipe

Peaches are one of my favorite fruits to bake with, as I mentioned before, and I love how they are juicy and soft and not overly sweet. They pair so well with cinnamon and vanilla and soften up even more when they are baked.

I personally love fruit desserts and baking with fruit so it’s so fun to share fruit recipes with you all and sharing how to make them.

This Peach Galette recipe topped with vanilla ice cream is so simple to make and is like a pastry that you can purchase at a coffee shop or bakery but it’s made freshly at home. One perk about making recipes at home is you know EVERYTHING that’s in it and can know the quality of what you’re getting.

Fruit Galettes are like a short cut pie. It’s made up of pie crust, fruit mixture and often brushed with an egg wash, sprinkled with sugar, baked and then topped with ice cream or whipped cream… just like a pie!! BUT they are SO much quicker and easier to make.

Galettes are baked flat as pies are baked in a pie dish. To make a galette you lay out your rolled out round pie dough on a baking sheet, layer it with a mixture of fruit, in this case- peaches, as well as some sugar and cinnamon, then you fold over the pie crust over the fruit and bake it.

You can brush it with an egg wash and some course sugar for some more flavor and better texture. It definitely elevates it!! Then once it’s out of the oven, it’s my favorite part: ADDING ICE CREAM and topping it off with cinnamon and powdered sugar.

You can use a pre-made pie crust if you would like OR make my homemade pie crust that is SOOO flaky!! It’s only a few ingredients and absolutely yum!! You could even use a canned pie filling if you want to fully shortcut this recipe if you are in a time crunch although it’s, of course, the best homemade.

I am so excited for you guys to try this recipe and I hope you love it as much as I do. I think my favorite thing about it, is that it reminds me of a pastry that you can buy at a coffee shop. I love fruit desserts with ice cream.

I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.

What You’ll Need:

  • all purpose flour
  • butter (unsalted or salted)
  • sugar
  • salt
  • vinegar
  • ice water
  • peaches
  • cinnamon
  • brown sugar
  • lemon juice
  • cornstarch
  • vanilla extract
  • egg
  • milk
  • course sugar
  • Vanilla Ice Cream (or whipped cream)
  • powdered sugar (optional)

All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.

This Peach Galette recipe is so easy and so delicious. It is made up of a flaky pie crust, a delicious flavorful peach center and perfectly topped with vanilla ice cream or whipped cream. This is a great recipe for summer and fall and anyone who loves peaches. It's so decadent, I hope you love it.

Ingredients Method

Ingredients
  

For Crust:
  • 2 cups flour all purpose
  • 1 cup cold butter cubed
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 tsp vinegar
  • 5-8 tbsp ice water
  • + flour for rolling
For Peach Filling:
  • 3 peaches pitted & sliced
  • 1 tsp cinnamon
  • ¼ cup brown sugar
  • 1 tbsp lemon juice
  • 1 tablespoon cornstarch
  • 1 tsp vanilla extract
For Topping:
  • 1 egg
  • 1 tbsp milk
  • 2 tbsp course sugar
  • Vanilla Ice Cream (or whipped cream)
  • Cinnamon for dusting
  • Powdered sugar for dusting

Method
 

For Crust:
  1. In a large bowl add your flour, sugar, salt, & cold cubed butter and using a pastry cutter or fork, combine it together. It will take a bit of mixing before it comes together. You can also use your hands to help break up butter.
  2. Once your mixture is combined and crumbly, add your vinegar and then your ice water 2 tbsps at a time mixing in between each one.
  3. When your dough comes together, split in into two equal portions, form them into a disks and wrap in plastic wrap to chill for 30 minutes.
For Peach Filling:
  1. In a medium sized bowl add your sliced peaches, cinnamon, brown sugar, lemon juice, cornstarch, and vanilla and store until well combined and evenly coated.
Assemble and Bake:
  1. Preheat your oven to 400° F and line a baking sheet with parchment paper.
  2. Once you crust has chilled, take one, and roll in into a circle. You can keep edges rough or cut them to be round.
  3. Transfer your crust to your baking sheet lined with parchment paper.
  4. Layout your peaches in the middle of the crust in whatever pattern you’d like. Drizzle remaining liquid over top.
  5. Fold the edges of your crust over your peaches. I did mine in five folds but you can do these steps however you’d like your galette to look like.
  6. Whisk together your egg and milk and using a pastry brush, brush it over your crust and then top with course sugar.
  7. Place in the fridge to chill for 10 minutes.
  8. Bake at 400°F for 20-24 minutes until the crust in golden brown and crispy.
  9. Let cool, cut and serve with Vanilla Ice Cream.
  10. Sprinkle with cinnamon or powdered sugar if you’d like to. Enjoy!!
