Let’s go back to the nostalgia of our childhood with these Homemade Cosmic Brownies. They are soft, fudgy, and topped with chocolate ganache and rainbow chocolate chip sprinkles just like the packaged treat. These are even better because you know exactly what’s going into them and there are no added preservatives, no corn syrup.
There are not many things that are more nostalgic than little Debbie desserts. It was definitely a treat growing up. From Oatmeal Cream Pies, Nutty Buddies and Swiss Rolls, to Fudge Rounds, Christmas tree cakes and of course, Cosmic Brownies.
These brownies are so easy to make. They are made up of just two layers, the fudgy brownies as the base and the chocolate ganache layer on top. AND of course the rainbow chocolate chip sprinkles to represent the ones on the cosmic brownies. You can add as many or as little as you would like. I got my sprinkles on amazon.
One of the most satisfying parts about making these brownies is spreading the chocolate ganache over them and smoothing it out. It’s so fun and of course adding the sprinkles as well.
This recipe is part of my BROWNIE SERIES where I put a spin on the classic brownie dessert and make it a little more different. SO far in this series I have done Peanut Butter Swirl Brownies which are absolutely delicious to anyone who like peanut butter. Then of course here is my classic fudgy crinkle top brownie recipe which is SO yum & classic.

This recipe would be perfect to make for a back to school treat, a birthday party (90s theme? hello!!), to put in school lunches, to make for a special event or party OR just to fulfill your sweet tooth on a normal everyday day. It’s so fun and nostalgic which makes them the perfect dessert to bring to a get together.
I cut these brownies into 12 rectangular brownies to recreate how the Cosmic Brownies are. You can of course cut them into squares as well or cut each rectangle in half to make 24 squares.
If chilling your brownies before cutting them into the bars helps, then definitely do so. The ganache will firm up a bit allowing your brownies to cut better and ultimately resulting in a better copycat Cosmic brownie. Also using a plastic knife will give you a smoother cut.

What You’ll Need:
- butter
- brown sugar
- sugar
- eggs
- 1 cup chocolate chips melted
- vanilla extract
- cocoa powder
- all purpose flour
- salt
- heavy whipping cream
- rainbow chocolate chip sprinkles
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun cookie and I’m so excited for you to try them out.
Homemade Cosmic Brownies
Ingredients
- 3/4 cup butter melted
- 1 cup brown sugar
- 1/2 cup sugar
- 3 eggs
- 1 cup chocolate chips melted
- 1 tbsp vanilla extract
- 1/3 cup cocoa powder
- 1 1/4 cup flour
- 1 tsp salt
- 2 tbsp rainbow chocolate chip sprinkles
For Chocolate Ganache:
- 1/3 cup heavy whipping cream
- 3/4 cup chocolate chips
- 2 tbsp butter
Instructions
For Brownies:
- Pre-heat your oven to 325° F and line a 9 by 13 inch pan with parchment paper.
- In a large bowl, add your eggs and sugar and whisk until combined and has a foamy consistency.
- In a separate bowl, add your melted butter and melted chocolate and stir until combined. Add cocoa powder and stir again. I usually do this step in a large measuring cup.
- Slowly pour your chocolate butter mixture into your sugar egg mixture. Stir until combined.
- Add your vanilla extract and stir again.
- Add in your flour and salt and mix until just combined. Batter will be pretty thick.
- Pour your brownie batter into your baking dish lined with parchment. (Parchment helps remove the brownies from you pan and avoids sticking) Spread it out evenly.
- Bake in your oven pre-heated to 325° for about 25-30 minutes.
- Remove from oven. Let cool.
For Chocolate Ganache:
- In a large measuring cup, heat your Heavy Whipping Cream for about 45 seconds. Add your chocolate chips and butter and let sit for a few minutes.
- Stir together until well combined and smooth.
- Once your brownies have cooled, add your chocolate ganache, spread it out evenly and top with rainbow chocolate chip sprinkles.
- Cut into small rectangles.
- Serve, share and enjoy!!
