Gingerbread is definitely a classic Christmas flavor and I feel like usually it’s a “love it” or a “hate it” flavor. If you are here I hope you love gingerbread and that these cookies are everything you expect them to be and more!! The spiciness of the gingerbread pair perfectly with the smooth creamy cheesecake filling.
For the past few years, I have done a Christmas Cookie series called my 12 days of Christmas Cookie series and it is an absolute blast. I make 12 different Christmas Cookie recipes for you all to make and share with your friends and family and OF COURSE, make for Santa as well. I love doing this cookie series for the holidays and seeing you guys make them and enjoy them. It’s one of my favorite things ever!!

This is my third year doing this series so if you are ever in need of Christmas Cookie recipe ideas, you’ve come to the right place.
Down below, I’m going to share some of my most favorite cookie recipes from the series. These recipes are so perfect to make for the holidays and I hope you find some you want to make this year:

These recipes are great to make for Christmas cookie swaps, holiday parties, family get togethers, office Christmas parties, with your boyfriend, girlfriend, best friends or loved ones or just to make on a cold winter evening to enjoy while watching your favorite Christmas movies. You can even make them with your kids and they would love it!!
I love baking Christmas cookies at this time of year. It’s so fun to see how people love to bake and try out new recipes at this time of year. One of my first memories baking is decorating Christmas Cookies with my family. So baking around this time of year is so special.
It’s so fun to find recipes that can become a staple for the holiday season that we can rely on and go back to every year. I hope that my cookie recipes can become that for people.
I love creating a list of all the ingredients you will need to make my recipe on the post before the recipe. That way you can clearly see everything you’ll need and what you may need to go grab at the store to make them.
What You’ll Need:
- butter
- brown sugar
- sugar
- eggs
- molasses
- vanilla extract
- ginger
- cinnamon
- cream of tartar
- nutmeg
- salt
- baking soda
- cornstarch
- all purpose flour
- cream cheese
- powdered sugar
- heavy whipping cream
All the ingredients are very simple and easy to find at your local grocery store OR already in your kitchen ready to go. They are simple ingredients but together make such a delicious fun recipe and I’m so excited for you to try them out.
What is Brown Butter & How Do You Make It?
Basically brown butter is just butter that’s been cooked on the stove. It foams up and the milk solids caramelize giving it it’s delicious deep nutty flavor. It takes a few quick minutes on the stove and the smell is like no other. Let’s just say it’s amazing and it’s a GAME CHANGER when baking. It’s hard to go back once you make it a few times and super simple to make so the extra step is optional but 100% worth it.
You can still make this recipe without using brown butter it just won’t have the nutty flavor but will still be delicious. If you also want the texture to be the same, I would use melted butter because the consistency of brown butter and melted will be the most similar.

Gingerbread Cheesecake Stuffed Cookies
Ingredients
- 1 cup butter 2 sticks, unsalted, browned
- 1 cup brown sugar
- 1/3 cup + 1/3 cup sugar
- 2 eggs + 1 egg yolk
- 1/4 cup molasses
- 1 tbsp vanilla extract
- 1/2 tsp ginger
- 1 tbsp cinnamon
- 1/2 tsp cream of tartar
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tbsp cornstarch
- 2 3/4 cups flour all purpose
For Cheesecake Filling:
- 8 oz cream cheese (1 block)
- 1 1/2 cups powdered sugar
- 1/4 cup heavy whipping cream
- 1 tsp vanilla extract
Instructions
For Cheesecake Filling:
- In a medium sized bowl, mix together your cream cheese, powdered sugar, heavy whipping cream and vanilla extract until well combined.
- Scoop out spoonfuls of your mixture onto a piece of parchment paper and place in the freezer to set.
For Cookies:
- Pre heat your oven to 350° F and line your baking sheets with parchment paper.
- In a large bowl add your butter, brown sugar and â…“ cup sugar and stir until combined. Add your eggs, egg yolk, molasses and vanilla extract and mix until well combined.
- Add your dry ingredients and mix once more.
- Scoop out your cookie dough and place a spoonful of the chilled cheesecake mixture in each cookie and roll into a ball. Roll in sugar and place on baking sheet.
- Bake in the oven at 350 degrees for 8-10 minutes.
- Remove from oven and let cool.
- Share and enjoy!!

First, these cookies taste amazing, but they are not for the faint of heart baker. I doubled the cookie recipe for a cookie exchange, but did not double the cream cheese filling and still had plenty. I barely fit the tsp cookie scoop of cream cheese mixture in the T cookie scoop. I also had to repeatedly put the cream cheese blobs back in the freezer and the cookie dough back in the fridge to firm them up enough to work with.
I really think the cookies are worth it ( rave reviews), but save enough time to get things cool/frozen again mid baking. I also feel like not adding the heavy whipping cream would have helped the cream cheese inside firm up with no change in taste.
